PROCEDIMIENTO PARA INHIBIR LA FORMACION DE N-NITROSAMINAS EN PRODUCTOS ALIMENTICIOS CURADOS CON NITRITOS. SE LLEVA A CABO LA EXTRACCION ACUOSA DE HOJAS DE TE EN CALIENTE, A UNA TEMPERATURA DE 100J-125º C DURANTE UN PERIODO DE TIEMPO DE 10 A 60 MINUTOS; OBTENIENDOSE EL EXTRACTO INICIAL (FRACCION I); LAS HOJAS RESIDUALES DE LA OPERACION ANTERIOR, SE MOLTURAN Y SE SOMETEN A UNA SEGUNDA EXTRACCION, BAJO UNA TEMPERATURA DE 130J-210JC, DURANTE UN PERIODO DE TIEMPO DE 20 A 40 MINUTOS; EL RESIDUO RESULTANTE SE SEPARA POR CENTRIFUGACION PARA OBTENER LA FRACCION II, CON UNA CANTIDAD DE POLIFENOLES DE AL MENOS EL 6% EN PESO, BASADO EN EL PESO EN SOLIDOS DE TE. EL EXTRACTO DE TE SE AÑADE A LA MEZCLA DE CURADO Y POSTERIORMENTE SE REALIZA EL PROCESO DE CURADO POR NITRITOS DE LOS PRODUCTOS ALIMENTICIOS. DE APLICACION POR SU ACTIVIDAD INHIBIDORA EN LA FORMACION DE N-NITROSAMINAS DURANTE EL PROCESO DE CURADO DE ALIMENTOS POR NITRITOS.
