Abstract
PURPOSE: To prepare a concentrated ptisan having improved flavor, by heat- treating a concentrated leachate of a ptisan under pressure and specific conditions.
CONSTITUTION: One pt.wt. parched raw barley is leached with 1W25pts.wt. hot water to give a leachate concentration of a refractometric Brix ≥1.5°, and the resultant concentrated leachate is then heat-treated at a gauge pressure of about 0.2W1.8kg/cm2 and about 105W130°C for 10W40min under pressure. The resultant concentrated ptisan has a stronger flavor, richer taste and much better savor than the general ptisan or a concentrated leachate thereof untreated under heat and pressure which is made in a home and drunk directly without diluting with water.
