Abstract

PURPOSE: To prepare concentrated ptisan having excellent taste and flavor, by extracting newly roasted barley with a liquid obtained by the vacuum concentration of ptisan prepared by the conventional leaching process.
CONSTITUTION: Ptisan prepraed by leaching roast barley with hot water, is concentrated to about 1/6 under reduced pressure (30W50mmHg, ≤50°C). The concentrate is heated at 60°C and used as an extracting medium for newly roasted barley to obtain the objective concentrated ptisan. The amount of the roast barley used in the second step is 1/2W1/10 of that of the first step.
