Abstract

PURPOSE: To obtain the title product miso with more balanced nutritive quality than rice "miso", by applying a specific process, starting from unpolished rice having a high nutritive value.
CONSTITUTION: Unpolished rice is immersed in a solution of carbohydrase, e.g. cellulase, at 15W20°C for 8W16hr or at 33W40°C for 0.5W1hr to soften the outer layer of the rice, steamed under atmospheric pressure for 1W2hr or 0.5W1.0kg/cm2 for 10W35min, formented and ripened by the conventional method.
