EL CALCIO SE PUEDE AÑADIR EN FORMA DE CLORURO, DE ACETATO, DE TARTRATO, DE MALEATO O DE LACTATO. EL PH SE PUEDE AJUSTAR A 3-3,5 VALIENDOSE DE CUALQUIER ACIDO COMESTIBLE FUERTE, TAL COMO EL ACIDO CLORHIDRICO, ACIDO TARTARICO, MALICO O LACTICO. LOS SOLIDOS DE LA MATERIA VEGETAL SE EXTRAEN A 20-100 C EN UN PERIODO DE 10 A 30 MINUTOS. LA PROPORCION DE LA CANTIDAD DE AROMA DEBE SER DE 0,1 A 2G/L DE LIQUIDO UTILIZADO. LA BEBIDA SE PUEDE PASTEURIZAR A 75-85 C DURANTE DE 1 A 2 MINUTOS Y ENVASAR EN CAJAS ESMALTADAS, FRASCOS DE VIDRIO O ENVASES DE CARTON QUE LLEVEN UN FORRO INTERIOR IDONEO.
