LAVAR UN MATERIAL DE SOJA QUE CONTIENE GRASA EN UN MEDIO ACUOSO A UN PH COMPRENDIDO ENTRE 3,5 Y 5,5, PRODUCIENDOSE UN MATERIAL PARCIALMENTE DESENGRASADO. 2. SOMETER A HIDROLISIS EL PRODUCTO OBTENIDO POR MEDIO DE UNA ENZIMA PROTEOLITICA EN PRESENCIA DE AGUA, Y DE UNA BASE A UN PH RELATIVAMENTE CONSTANTE, HASTA UN PH COMPRENDIDO ENTRE 1 Y 20, CON POSTERIOR DESACTIVACION DE LA ENZIMA. 3. SEPARAR LA FASE ACUOSA DEL HIDROLIZADO DE LA FASE ACEITOSA Y DE LA FASE SOLIDA. OPCIONALMENTE SE LAVA LA FASE SOLIDA OBTENIDA. LA ENZIMA PROTEOLITICA USADA EN LA HIDROLISIS SE PRODUCE POR MEDIO DE B. LICHENIFORMIS Y LA HIDROLISIS SE REALIZA A UN PH OPTIMO DE ESTA ENZIMA. LA ACTIVIDAD PROTEOLITICA SE INACTIVA POR MEDIO DEL ACIDO MALICO O CITRICO.
