UN CONCENTRADO DE CUAJO MICROBIANO, <<MUCOR MIEHEI>>, CONTENIENDO EVENTUALMENTE CLORURO SODICO, AL QUE SE AÑADE UN VOLUMEN IGUAL DE AGUA, SE AJUSTA A PH ENTRE 5 A 9 CON HIDROXIDO SODICO. SE AÑADE EL OXIDANTE, UN COMPUESTO DE HALOGENO EN UN ESTADO DE OXIDACION COMPRENDIDO ENTRE 0 Y 3, EN UNA CONCENTRACION TAL QUE PERMITA MANTENER EL PH DENTRO DE LOS VALORES INDICADOS Y EN PROPORCION PONDERAL CON LA CANTIDAD TOTAL DE PROTEINA CONTENIDA EN EL CUAJO ENTRE 0,01 Y 1. SE MANTIENE A TEMPERATURA AMBIENTE DURANTE VARIAS HORAS, SE AÑADE SULFITO SODICO PARA ELIMINAR EL EXCESO DE OXIDANTE, SE DILUYE CON AGUA, SE AJUSTA EL PH A 6,0 CON MEZCLA REGULADORA ACETICO/ACETATO Y SE TRATA TERMICAMENTE ENTRE 55 Y 60GC DURANTE VARIOS MINUTOS.
