Abstract

Procedimiento para la fabricación de un producto alimenticio proteínico texturado, que imita a la carne cocida a partir de materia proteínica fibrosa sin empleo de un ligante, según el cual se hilan las proteínas, se someten los hilos a una operación de prensado-deshidratación en un molde, se impregna luego con una solución de precursores de aroma y se esterilizan en un envase, caracterizado porque la operación de prensado- deshidratación se efectúa por compresión mecánica de las fibras en sentido axial estando dispuestas éstas de modo sensiblemente paralelo al molde.
