Abstract
Procedimiento de producir un alimento a base de carne, caracterizado porque comprende las etapas de conformar la carne en un tocho compacto alargado de longitud substancial, congelar el tocho a estado sólido, hacer avanzar el tocho congelado longitudinalmente, revestir el tocho con una grana fluida durante el avance longitudinal, congelar superficialmente el tocho para congelar la capa de grasa y cortar el tocho revestido según la longitud deseada.
