Abstract
Procedimiento para la fabricación de un alimento con textura fibrosa análoga a la de la carne, a partir de materia proteica húmeda no estructurada, caracterizado porque se refrigera por debajo de 0ºC hasta que se produzca una cristalización parcial del agua contenida en la misma y porque, en este estadio, se le hace sufrir, por fuerza y presión, una deformación mecánica tal que las fibrillas proteicas de la materia sometida a este esfuerzo se reagrupen entre sí según una orientación tal que esta adquiera un aspecto y una textura que se acerque a la de las fibras musculares.
