Abstract

In making a meat product which on eating is tender and possesses the "chewiness" of good-quality meat, there is prepared a mixture of finely divided raw meat, finely divided fat and water, the raw meat protein content of the mixture being 10-22%, the fat content being 10-20% and the remainder being predominantly, e.g. 65-75%, water, and the mixture is moulded and is treated to consolidate it. Consolidation may be by freezing or by cooking. The product may be cooked and dried. In preparing the meaty mixture, curing salts or cooked meat in coarse form may be included. Examples are of preparing low grade beef and low grade shoulder pork with leg pork products and preparing a dehydrated meal of such a beef product, dried carrots, beans and onions, and a gravy-forming composition of flour, yeast extract and beef dripping.
