Abstract
Procedimiento para tostado continuo de masas de almendra de cacao o de cacao líquido, procedente de almendras de cacao, crudas, secas, peladas, partidas y troceadas, para lo cual la masa de cacao líquida se hace llegar, en capas delgadas, sobre una superficie, sobre la que discurre la masa, para el tostado de la misma, aclarándose y limpiándose por medio de un gas por el procedimiento de contracorriente, caracterizado por el hecho de producirse calor por frotamiento en el interior de la delgada capa de masa de cacao, caracterizado también por el hecho de que la masa, continuamente y parcialmente es levantada de la capa, volviéndose a rociar o inyectar en la masa, a la que se hace llegar a todo lo largo de la capa delgada y también en la zona de rociado de la masa, gas en forma de aire caliente. Para dicho proceso la masa atraviesa por tres fases, en la primera de las cuales se eleva la temperatura de la masa hasta alcanzar la temperatura de tostado, en la segunda fase se mantiene la masa ala temperatura de tostado y en la tercera fase se hace descender la temperatura.
