Abstract

Procedimiento para la concentración de soluciones acuosas que contengan, además de componentes no volátiles, alcohol y pequeñas cantidades de componentes aromáticos volátiles, como por ejemplo vino y cerveza, mediante la eliminación selectiva de agua, caracterizado porque comprende las siguientes fases: a) Una primera fase en la cual la mayor parte de alcohol y de componentes aromáticos volátiles se separa mediante un proceso de destilación, preferiblemente a presión muy reducida, de la cantidad bruta de solución acuosa y en la cual los vapores obtenidos mediante dicho proceso de destilación se condensa en un condensador. b) Una segunda fase en la cual la solución acuosa obtenida en la fase anterior se concentra mediante la eliminación de agua en un proceso de concentración por congelación. c) Una tercera fase en la cual el condensado obtenido en la fase (a) se mezcla con el concentrado obtenido en la fase (b).
