Abstract

Procedimiento para preparar una suspensión acuosa de almidón licuado y al menos sustancialmente solubilizado que tiene una concentración mayor que 40% de sustancia seca, que comprende las etapas siguientes: A) preparar primeramente una suspensión acuosa, que tiene un contenido de sólidos no mayor que aproximadamente 40%, de un hidrolizado de almidón que tiene un E.D. comprendido entre 1 y 25, siendo al menos una porción sustancial del hidrolizado soluble en agua, y B) añadir gradualmente a la suspensión almidón granular y someter continuamente el almidón añadido a la acción licuadora de una alfa-amilasa bacteriana, y elevar concomitentemente la temperatura de la suspensión hasta no más de 90ºC.
