Abstract
Procedimiento para eliminar azúcares flatulentos de la soja, según el cual se hace fermentar una suspensión acuosa de soja por medio de levaduras alimenticias, en particular la Saccharomyces (s.) uvarum, caracterizado porque se prepara una suspensión de soja que contiene del 5 al 45% en peso de materia seca, se la inocula con al menos una cepa de S. uvarum llevada al estado de crecimiento sobre un medio que contiene al menos un azúcar que presenta al menos un enelace alfa-D-galactopiranosil y se hace fermentar la suspensión en condiciones anerobias durante al menos 8 horas, a una temperatura de 15 a 50ºC.
