Abstract

Recipiente de carga para su utilización en una instalación a alta presión, dicho recipiente de carga comprendiendo un espacio hueco (3) para alojar productos de alimentación, una pared (1), así como un dispositivo para la regulación de la temperatura (5), estando diseñada la pared (1) del recipiente de carga con varias separaciones, existiendo un espacio intermedio entre paredes de separación (4), y rellenando dicho espacio intermedio entre paredes (4) con un medio para la regulación de la temperatura, caracterizado porque dicho recipiente de carga presenta por lo menos un contacto eléctrico para suministrar corriente al dispositivo de regulación de la temperatura, disponiéndose el contacto eléctrico de modo que la corriente pueda circular completamente a través del material de partida, los productos manufacturados o los productos semiacabados existentes en el espacio hueco.

parte, resulta posible influir en la temperatura del producto comestible, de modo que su temperatura se regule previamente y luego se introduzca en el recipiente de carga.
El calentamiento o regulación térmicos previos del producto a procesar puede asimismo tener lugar en el recipiente de carga con el agente de presurización o regulación de la temperatura que se encuentre en dicho recipiente. En dicho tipo de casos, la pared, el agente de presurización o regulación de la temperatura y el producto a procesar presentan la misma temperatura de entrada.
En el caso de un producto a procesar que contenga grasa, siendo agua el agente de presurización o regulación térmica, debido al calentamiento adiabático distinto, se produce una caída de la temperatura que conlleva una regulación térmica menor en los márgenes del producto de alimentación durante el tratamiento a alta presión. A fin de obtener una regulación homogénea de la temperatura del producto a procesar, es imprescindible que la temperatura de tanto el agente de presurización existente en el recipiente de carga y/o en la caldera de alta presión, como también de la pared del recipiente de carga sea más elevada que la temperatura del producto a procesar, de modo que se prevenga un gradiente térmico indeseado en el interior del producto a procesar o del producto de alimentación. En el caso de que sea imprescindible enfriar el producto durante la manipulación a presión, el agente de presurización y el medio de regulación de la temperatura o la pared del recipiente de carga no se deben calentar a mayor temperatura que el producto a procesar.
En una forma de realización posible del recipiente de carga según la presente invención, las paredes se diseñan fijas, de modo que una vez rellenadas puedan cerrarse y sellarse herméticamente. La presión generada en la caldera de alta presión puede transferirse al producto de alimentación que se encuentra en el recipiente. En todo el recipiente de presión predomina el mismo valor de presión isostática.
Dado que el producto a procesar o el producto comestible no entra en contacto con el agente de presurización en la caldera de alta presión, es decir con el agente de presurización que se encuentra en el exterior de recipiente de carga, el producto de alimentación puede introducirse no embalado en el espacio hueco del recipiente de carga. En el caso de materia prima o un producto líquido y pastoso, por ejemplo, la carne, puede procesarse a alta presión y simultáneamente regularse su temperatura en un recipiente de carga según la presente invención.
Preferentemente, el recipiente de carga presenta un aislamiento, con el objetivo de que no se produzca un aumento o disminución no pretendido de la temperatura en el caso del contacto de producto de alimentación a regular térmicamente con la pared del recipiente. Dicho aislamiento puede diseñarse por ejemplo como una capa de aislamiento aplicada en la superficie exterior del recipiente de carga. Por otra parte, al diseñarse una pared doble o múltiple, también puede concebirse una solución que se base en la introducción de un medio de aislamiento en el espacio intermedio entre paredes. Así, conforme a una forma adicional de realización según la presente invención, el aislamiento o la capa de aislamiento se encuentra en el espacio intermedio entre paredes. Con ayuda de una capa aislante, puede efectuarse la manipulación combinada a alta presión y térmica incluso en el caso de productos refrigerados o congelados.
A título de ejemplo, la capa de aislamiento puede diseñarse de modo que se disponga una capa aislante de doble pared y flexible alrededor de una bolsa tubular rellenada por ejemplo con material de relleno previamente calentado y agua a temperatura previamente regulada, rellenándose dicha capa con el medio de regulación térmica descrito anteriormente en el espacio intermedio entre las distintas capas. El rellenado del espacio intermedio de la capa de aislamiento con el medio de regulación térmica puede tener lugar antes, durante o después de la introducción de la bolsa tubular rellenada o a rellenar. En consecuencia, resulta posible rellenar una bolsa tubular o una lámina tubular con el producto a procesar y sellarla por ambos extremos. A continuación, se introduce dicha bolsa tubular rellenada en una manguera, que por ejemplo puede comprender diversas capas de tejido. En el espacio intermedio, tal como se ha mencionado anteriormente, se introduce el medio de regulación de la temperatura. En la zona de la cabeza y del fondo de los tubos, se pueden disponer placas de material plástico resistentes a la presión, con el objetivo de evitar la deformación de los tubos rellenados al introducirlos en la instalación de alta presión.
En una forma adicional de realización según la presente invención, la capa aislante puede realizarse en un material elástico espumado, rellenando los espacios huecos con aceite, PCB (bifenileno policlorado), glicerina, agua o bien otro material. Dicha capa aislante se puede utilizar directamente o bien revestida de un tejido para el aislamiento.
Resulta posible emplear recipientes de carga diseñados rígidos o fijos, de modo que tras la manipulación a alta presión y/o térmica, el producto de alimentación pueda rellenar en condiciones estériles recipientes, paquetes o elementos similares. Para aplicaciones en el caso de productos pastosos acabados o semiacabados, el recipiente de carga se fabrica preferentemente de modo que la pared sea resistente y su sección transversal no varíe, incluso cuando existan elevadas presiones.
