Abstract

Procedimiento de elaboración de un edulcorante natural.#El procedimiento se basa en mezclar miel como materia prima y maltodextrina, en donde la miel participa en una proporción del orden del 80% y la maltodextrina en un 20%. La mezcla se almacena en atmósfera inerte y se somete a un proceso de secado en vacío para obtener una masa pastosa que es molida para obtener un producto en forma de grano, correspondiente al producto final deseado. El edulcorante natural obtenido se utiliza como producto para endulzar bebidas y comidas de todo tipo.
