Description
- Die vorliegende Erfindung betrifft ein Schneidmesser für Maschinen zum Aufschneiden von Lebensmittelprodukten, insbesondere für Hochgeschwindigkeitsslicer, wobei das Schneidmesser ein während des Schneidebetriebes um eine Drehachse rotierendes Sichelmesser ist, das an seinem radial äußeren Umfang eine von einer Kreisform abweichende, insbesondere nach Art einer Spirale um die Drehachse umlaufende, Schneidkante aufweist, die in einer senkrecht zur Drehachse verlaufenden Schneidebene liegt, wobei die Schneidkante das radial außen liegende Ende der Schneidenfläche bildet, die einen Teil der während des Schneidebetriebs von einem aufzuschneidenden Produkt abgewandten Messerrückseite bildet und mit der Schneidebene einen Schneidenwinkel einschließt, und wobei die Größe des Schneidenwinkels in Umfangsrichtung des Schneidmessers variiert. Des Weiteren betrifft die vorliegende Erfindung die Verwendung des Schneidmessers zum Schneiden von Lebensmittelprodukten.
- Derartige Schneidmesser sind aus dem Stand der Technik, beispielsweise der
EP 1 598 159 bekannt. Weiterer Stand der Technik ist dieEP 08 785 722 A2 - beim Schneiden das Produkt möglichst wenig gestaucht wird,
- die abgeschnittene Scheibe die gewünschte Flugbahn einnimmt und/oder
- die eine möglichst lange Standzeit aufweisen
- Es war deshalb die Aufgabe der vorliegenden Erfindung ein derartiges Messer zur Verfügung zu stellen.
- Gelöst wird die Aufgabe mit einem Schneidmesser gemäß der Ansprüche 1-4. Die vorliegende Erfindung betrifft ein Schneidmesser, das zum Aufschneiden von Lebensmittelprodukten, insbesondere für Hochgeschwindigkeitsslicer eingesetzt wird. Bei Hochgeschwindigkeitsslicern wird das Produkt, beispielsweise ein Wurst-, Schinken- oder Käseriegel, in Richtung des rotierenden Schneidmessers kontinuierlich oder intermittierend transportiert, das von dem vorderen Ende des Lebensmittelproduktes Lebensmittelscheiben abschneidet. Diese Lebensmittelscheiben fallen sodann beispielsweise auf einen Ablagetisch, auf dem sie zu einer Portion von beispielsweise zehn Scheiben konfiguriert werden. Sobald eine derartige Portion fertiggestellt ist, wird diese aus dem Schneidbereich des Messers abtransportiert und eine neue Portion kann aufgeschnitten werden.
- Erfindungsgemäß ist das Schneidmesser ein Sichelmesser. Das Messer kann eine schalen- oder schüsselartige Form oder eine Hohlstruktur aufweisen. An seinem radial äußeren Umfang weist das Schneidmesser eine Schneidkante auf, die in einer senkrecht zur Drehachse des Schneidmessers verlaufenden Schneidebene liegt. Die Schneidkante bildet dabei das radial außen liegende Ende einer Schneidfläche, die einen Teil der während des Schneidbetriebs von dem aufzuschneidenden Produkt abgewandten Messerrückseite bildet und mit der Schneidebene einen Schneidenwinkel einschließt. Erfindungsgemäß variiert die Größe dieses Schneidenwinkels in Umfangsrichtung des Schneidmessers, wobei sich der Scheidenwinkel aber nur in Teilbereichen der in Umfangsrichtung verlaufenden Schneidkante verändert.
- Dadurch, dass sich der Schneidenwinkel nur in Teilbereichen der in Umfangsrichtung verlaufenden Schneidkante verändert, ist das erfindungsgemäße Schneidmesser kostengünstiger herzustellen als Schneidmesser wie sie beispielsweise in der
EP 08 785 722 A2 - Gemäß der vorliegenden Erfindung verändert sich der Schneidenwinkel unstetig. Diese unstetige Veränderung des Schneidenwinkels kann sich nur über Teilbereiche der Schneidkante oder über die gesamte Länge erstecken. Unstetig im Sinne der Erfindung bedeutet, dass sie nicht stetig im mathematischen Sinn ist, d.h. dass der Schneidenwinkel sich beispielsweise sprunghaft, mit einem Absatz und/oder knickartig verändert.
- Durch diese Unstetigkeitsstellen kann der Schneidenwinkel in bestimmen Umfangsbereichen konstant bleiben und sich dann beispielsweise absatzweise ändern. Dadurch ist die Herstellung und das Schärfen des Schneidmessers wesentlich einfacher als bei einer stetigen Veränderung des Schneidenwinkels über den gesamten Verlauf der Schneidkante, wie er beispielsweise in der
EP 08 785 722 A2 - Die zu diesem Gegenstand der vorliegenden Erfindung gemachten Ausführungen gelten für die anderen Gegenstände der vorliegenden Erfindung gleichermaßen und umgekehrt.
- Vorzugsweise befindet sich eine Unstetigkeitsstelle von einem Übergang von einem Schneidenwinkel zu einem anderen Schneidenwinkel.
- Die folgenden Ausführungen gelten für alle Gegenstände der vorliegenden Erfindung gleichermaßen. Erfindungsgemäß vergrößert sich der Schneidenwinkel entgegen der Drehrichtung des Schneidmessers.
- Weiterhin bevorzugt vergrößert sich der Schneidenwinkel mit zunehmendem radialen Abstand der Schneidkante von der Drehachse des Schneidmessers.
- Erfindungsgemäß weist die Schneidkante mindestens einen, vorzugsweise mehrere Abschnitt(e) aufweist, in dem/denen sich der Schneidenwinkel nicht verändert. Vorzugsweise umfasst ein Abschnitt 1 - 120°, besonders bevorzugt 5 - 90°, ganz besonders bevorzugt 10 - 70° und am meisten bevorzugt 6 -30°. Erfindungsgemäß weist der Schneidfläche Unstetigkeitsstellen auf.
- Vorzugsweise beträgt der Schneidenwinkel 15 - 45°, besonders bevorzugt 20 -30°.
- Ein weiterer Gegenstand der vorliegenden Erfindung ist die Verwendung des erfindungsgemäßen Schneidmessers zum Aufschneiden eines Lebensmittelproduktes in Lebensmittelscheiben, wobei sich das Schneidmesser beim Schneiden dreht.
- Im Folgenden werden die Erfindungen anhand der
Figuren 1 bis 4 erläutert. Diese Erläuterungen sind lediglich beispielhaft und schränken den allgemeinen Erfindungsgedanken nicht ein. Die Erläuterungen gelten für alle Gegenstände der vorliegenden Erfindung gleichermaßen. -
Figur 1 zeigt eine Draufsicht auf das erfindungsgemäße Schneidmesser. -
Figur 2 zeigt teilweise eine Querschnittsansicht eines erfindungsgemäßen Schneidmessers. -

Figur 4 zeigt eine Schneidmesserschleifvorrichtung. - Bei dem Schneidmesser gemäß
Figur 1 handelt es sich um ein sogenanntes Sichelmesser, das sich um eine Drehachse 1 in der durch den Pfeil 6 gekennzeichneten Richtung dreht und dabei mittels seiner Schneidkante 2 in ein Produkt 4 eintaucht und sodann eine Scheibe von dem Produkt abschneidet. Das erfindungsgemäße Schneidmesser wird mittels der Ausnehmung 5 und/oder nicht dargestellten Befestigungsmitteln an einer sich drehenden Welle einer Aufschneidevorrichtung befestigt. Mit dem Bezugszeichen R ist der Abstand der Schneidkante von der Drehachse des Schneidmessers dargestellt, der sich entgegen der Drehrichtung 6 des Schneidmessers vergrößert, so dass das Messer spiralförmig ausgebildet ist. Üblicherweise taucht das Produkt mit dem mit dem Bezugszeichen A gekennzeichneten Bereich in das Produkt ein und mittels diesem und den Bereichen B, C und/oder D wird die Lebensmittelscheibe von dem Produkt abgetrennt. Der Übergang von einem Bereich zum anderen ist durch das Bezugszeichen 19 symbolisiert. Der Fachmann versteht, dass bei einer Umdrehung des Messers mehrere Scheiben von mehreren nebeneinander liegenden Produkten abgeschnitten werden können. - Anhand von
Figur 2 ist erkennbar, dass das erfindungsgemäße Sichelmesser in dem vorliegenden Fall eine schalen- oder schüsselartige Form aufweist. Dadurch ist die Messerinnenseite gegenüber der senkrecht zur Drehachse 1 verlaufenden Schneidebene 7 zurückgesetzt, so dass das ein Freiraum 20 entsteht und das Schneidmesser das Produkt somit nur teilweise berührt. Auf der Messerrückseite 8 weist das erfindungsgemäße Messer eine Oberfläche 9 auf. Ebenfalls auf der Rückseite schließt sich an die Schneidkante 2 eine Schneidfläche 3 an, die in einem bestimmten Schneidenwinkel α vorgesehen ist, wobei der Schneidenwinkel α der Winkel zwischen der Schneidebene 7 und der Schneidenfläche 3 ist. Dieser Winkel α ist in der Regel größer als der Winkel β zwischen der Scheidebene 7 und der Oberfläche 9 der Messerrückseite. Erfindungsgemäß verändert sich der Schneidenwinkel α nun entlang der Schneidkante 2 aber nur in einem Teilbereich der in Umfangsrichtung verlaufenden Schneidkante 2. Dies ist inFigur 3 dargestellt.Figur 3a zeigt den Eintauchbereich A, dieFiguren 3b - 3d die Abschnitte B - D gemäßFigur 1 . In dem Eintauchbereich A hat der Schneidenwinkel beispielsweise einen konstanten Wert von α1 und in den weiteren Bereichen B, C und D einen konstanten Wert α2, α3 bzw. α4, wobei sich die Schneidenwinkel vorzugsweise an der Unstetigkeitsstelle 19 jeweils unstetig verändern. Gemäß einer alternativen Ausführungsform hat das Messer im Eintauchbereich beispielsweise einen Schneidenwinkel von α1, und in den Bereichen "B", "C" und "D" sind die Schneidenwinkel α2, α3 und α4 jeweils identisch. Gemäß einer weiteren alternativen Ausführungsform ist es auch möglich, dass der Schneidenwinkel in den Abschnitten "B" und "C" konstant ist und lediglich im Bereich "A" kleiner und im Bereich "D" größer ist. Der Fachmann erkennt, dass noch viele andere Kombinationen möglich sind. Es muss erfindungsgemäß nur gewährleistet sein, dass die Änderung der Schneidenwinkel von einem Bereich zum anderen unstetig ist und dass sich der Schneidenwinkel nur in Teilbereichen der Schneidkante verändert und dass sich der Schneidenwinkel entgegen der Drehrichtung des Schneidmessers vergrößert. -
Figur 4 zeigt eine Schneidmesserschleifvorrichtung. Das Schneidmesser 10 wird an einer sich drehenden Welle drehfest vorgesehen, an der auch eine Kurvenscheibe 11 drehfest angeordnet ist. Die Schneidfläche 3 des Schneidmessers 10 wird mittels eines Schleifmittels 14, hier eine sich drehende Schleifscheibe 14, das an der Schneidfläche 3 des Schneidmessers anliegt, geschliffen. Diese Schleifscheibe 14 wird mittels eines Federmittels 16 gegen einen Anschlag 17 gedrückt und ist in ihrem Winkel µ relativ zur Horizontalen einstellbar. Diese Einstellung erfolgt mittels eines Nocken 13, hier einer Rolle 13, die längs verschieblich in einem Gleitlager 12 gelagert ist, so dass der Hebel 21, der mit der Rolle 13 verbunden ist, die durch den Doppelpfeil gekennzeichnete Bewegung durchführen kann. Dieser Hebel 21 ist mittels eines Verbindungsmittels 18 mit dem Schleifmittel 14, 15 verbunden, so dass durch eine Rauf- und Runterbewegung des Verbindungsmittels 18 das Schleifmittel 14, 15 in seinem Winkel verändert wird. Claims (5)
- Schneidmesser (10) für Maschinen zum Aufschneiden von Lebensmittelprodukten, insbesondere für Hochgeschwindigkeitsslicer, wobei das Schneidmesser ein während des Schneidebetriebes um eine Drehachse (1) rotierendes Sichelmesser ist, das an seinem radial äußeren Umfang eine von einer Kreisform abweichende, insbesondere nach Art einer Spirale um die Drehachse (1) umlaufende, Schneidkante (2) aufweist, die in einer senkrecht zur Drehachse (1) verlaufenden Schneidebene (7) liegt, wobei die Schneidkante (2) das radial außen liegende Ende der Schneidenfläche (3) bildet, die einen Teil der während des Schneidebetriebs von einem aufzuschneidenden Produkt (4) abgewandten Messerrückseite (8) bildet und mit der Schneidebene (7) einen Schneidenwinkel (α) einschließt, und wobei die Größe des Schneidenwinkels (α) in Umfangsrichtung des Schneidmessers variiert und sich der Schneidenwinkel (α) nur in Teilbereichen der in Umfangsrichtung verlaufenden Schneidkante verändert, dadurch gekennzeichnet, dass sich der Schneidenwinkel (α) entgegen der Drehrichtung des Schneidmessers (10) vergrößert und dass sich der Schneidenwinkel (α) unstetig verändert.
- Schneidmesser (10) nach einem der voranstehenden Ansprüche, dadurch gekennzeichnet, dass sich der Schneidenwinkel (α) mit zunehmendem radialen Abstand (R) des Schneidmessers (10) vergrößert.
- Schneidmesser (10) nach einem der Ansprüche 1- 2, dadurch gekennzeichnet, dass die Änderung des Schneidenwinkels (α) mit Unstetigkeitsstellen in der Schneidfläche (7) erfolgt.
- Schneidmesser (10) nach einem der voranstehenden Ansprüche, dadurch gekennzeichnet, dass der Schneidenwinkel in einem Bereich von 15 - 45°, vorzugsweise 20 -30° liegt.
- Verwendung des Schneidmessers gemäß einem der voranstehenden Ansprüche zum Aufschneiden eines Lebensmittelproduktes in Lebensmittelscheiben, wobei sich das Schneidmesser beim Schneiden dreht.
