The present invention relates to a cutting blade for machines for slicing food products, in particular for high-speed slicer, wherein the cutting blade is a rotary knife rotating about a rotation axis during the cutting operation, which at its radially outer circumference deviates from a circular shape, in particular in the manner of a spiral around the The cutting edge is the radially outer end of the cutting surface, which forms part of the rear side facing away from a product aufzuschneids product during cutting operation and includes a cutting angle with the cutting plane, and wherein the size of the cutting angle varies in the circumferential direction of the cutting blade. Furthermore, the present invention relates to the use of the cutting blade for cutting food products.

Such cutting blades are known from the prior art, for example EP 1 598 159 known. Further prior art is the EP 08 785 722 A2 , The person skilled in the art constantly endeavors to provide cutting knives in which:
  • when cutting the product is compressed as little as possible,
  • the cut disc occupies the desired trajectory and / or
  • which have the longest possible service life
and / or which are relatively easy to manufacture.

It was therefore the object of the present invention to provide such a knife.

The problem is solved with a cutting blade according to claims 1-4. The present invention relates to a cutting blade which is used for slicing food products, especially for high-speed slicers. At high speed slurries, the product, for example a sausage, ham or cheese bar, is transported continuously or intermittently in the direction of the rotating cutting blade which cuts food slices from the front end of the food product. These food slices then fall, for example, on a storage table on which they are configured to a serving of, for example, ten slices. Once such a portion is finished, it is removed from the cutting area of the knife and a new portion can be cut open.

According to the invention, the cutting blade is a sickle blade. The knife may have a bowl or bowl-like shape or a hollow structure. At its radially outer periphery, the cutting blade has a cutting edge which lies in a cutting plane running perpendicular to the axis of rotation of the cutting blade. In this case, the cutting edge forms the radially outer end of a cutting surface, which forms part of the rear side of the knife facing away from the product to be sliced during the cutting operation and encloses a cutting angle with the cutting plane. According to the invention varies the size of this cutting angle in the circumferential direction of the cutting blade, wherein the Sheath angle but changed only in partial areas of the circumferential cutting edge.

Due to the fact that the cutting edge angle changes only in partial regions of the cutting edge extending in the circumferential direction, the cutting blade according to the invention is less expensive to manufacture than the cutting blade of the type described, for example, in US Pat EP 08 785 722 A2 are disclosed. Furthermore, it has been found that it is positive for the cutting behavior or the trajectory of the cut food disc when the cutting angle changed only in partial areas of the circumferential cutting edge and not the entire cutting edge has a changing cutting angle.

According to the present invention, the cutting angle changes discontinuously. This discontinuous change in the cutting angle can only extend over partial areas of the cutting edge or over the entire length. Discontinuous in the sense of the invention means that it is not continuous in the mathematical sense, i. that the cutting angle changes, for example, suddenly, with a heel and / or kink-like.

Through these points of discontinuity, the cutting edge angle can remain constant in certain peripheral regions and then change, for example, intermittently. As a result, the production and sharpening of the cutting blade is much easier than with a continuous change in the cutting angle over the entire course of the cutting edge, as he, for example, in the EP 08 785 722 A2 is claimed. In addition, the food slice to be cut off receives an additional impulse from the point of discontinuity of the knife, which for example moves it away from the product and / or forms it.

The statements made on this subject of the present invention apply equally to the other objects of the present invention and vice versa.

Preferably, a point of discontinuity is from a transition from one cutting edge angle to another cutting angle.

The following statements apply equally to all articles of the present invention. According to the invention, the cutting edge angle increases counter to the direction of rotation of the cutting blade.

Further preferably, the cutting angle increases with increasing radial distance of the cutting edge of the axis of rotation of the cutting blade.

According to the invention, the cutting edge has at least one, preferably a plurality of sections in which the cutting angle does not change. Preferably, a section comprises 1 - 120 °, more preferably 5 - 90 °, most preferably 10 - 70 ° and most preferably 6 - 30 °. According to the invention, the cutting surface has points of discontinuity.

Vorzugsweise beträgt der Schneidenwinkel 15 - 45°, besonders bevorzugt 20 -30°.The cutting angle is preferably 15-45 °, particularly preferably 20-30 °.

Another object of the present invention is the use of the cutting blade according to the invention for slicing a food product into food slices, wherein the cutting blade rotates during cutting.

In the following, the inventions are based on the FIGS. 1 to 4 explained. These explanations are merely exemplary and do not limit the general inventive concept. The explanations apply equally to all articles of the present invention.
  • FIG. 1 shows a plan view of the cutting blade according to the invention.
  • FIG. 2 partially shows a cross-sectional view of a cutting blade according to the invention.
  • FIG. 3 shows several cross-sectional views of a cutting blade according to the invention at different peripheral regions.
  • FIG. 4 shows a Schneidmesserschleifvorrichtung.

In the cutting blade according to FIG. 1 it is a so-called sickle blade, which rotates about a rotation axis 1 in the direction indicated by the arrow 6 and thereby dips by means of its cutting edge 2 in a product 4 and then cuts off a slice of the product. The cutting blade according to the invention is fastened by means of the recess 5 and / or fastening means (not shown) to a rotating shaft of a slicing device. The reference symbol R shows the distance of the cutting edge from the axis of rotation of the cutting blade, which increases counter to the direction of rotation 6 of the cutting blade, so that the blade is formed spirally. The product usually dips into the product at the area marked with the reference symbol A, and by means of this and the regions B, C and / or D, the food disc is separated from the product. The transition from one area to the other is symbolized by the reference numeral 19. The person skilled in the art will understand that several discs of several adjacent products can be cut off during one rotation of the knife.

Based on FIG. 2 It can be seen that the sickle knife according to the invention in the present case has a bowl-like or bowl-like shape. This is the result Inside the knife opposite to the perpendicular to the rotation axis 1 extending cutting plane 7 reset, so that a free space 20 is formed and the cutting blade thus only partially touches the product. On the back of the knife 8, the knife according to the invention has a surface 9. Also on the back of the cutting edge 2 is followed by a cutting surface 3, which is provided in a certain cutting angle α, wherein the cutting angle α is the angle between the cutting plane 7 and the cutting surface 3. This angle α is usually greater than the angle β between the sheath 7 and the surface 9 of the back of the knife. According to the invention, the cutting angle α now changes along the cutting edge 2 but only in a partial region of the cutting edge 2 running in the circumferential direction FIG. 3 shown. FIG. 3a shows the immersion area A, the Figures 3b - 3d the sections B - D according to FIG. 1 , In the immersion region A, for example, the cutting angle has a constant value of α1 and in the other regions B, C and D a constant value α2, α3 or α4, wherein the cutting angles preferably change discontinuously at the point of discontinuity 19. For example, according to an alternative embodiment, the knife has a cutting angle of α1 in the immersion region, and in the regions "B", "C" and "D" the cutting angles α2, α3 and α4 are identical. According to a further alternative embodiment, it is also possible that the cutting angle in the sections "B" and "C" is constant and is smaller only in the area "A" and larger in the area "D". The person skilled in the art recognizes that many other combinations are possible. It must only be ensured according to the invention that the change in the cutting edge angle is discontinuous from one region to another and that the cutting angle changes only in partial regions of the cutting edge and that the cutting angle increases counter to the direction of rotation of the cutting blade.

FIG. 4 shows a Schneidmesserschleifvorrichtung. The cutting blade 10 is rotatably provided on a rotating shaft on which a cam 11 is arranged rotatably. The cutting surface 3 of the cutting blade 10 is ground by means of an abrasive 14, here a rotating grinding wheel 14, which abuts against the cutting surface 3 of the cutting blade. This grinding wheel 14 is pressed by means of a spring means 16 against a stop 17 and is adjustable in their angle μ relative to the horizontal. This adjustment is effected by means of a cam 13, here a roller 13, which is mounted longitudinally displaceable in a sliding bearing 12, so that the lever 21, which is connected to the roller 13, can perform the movement indicated by the double arrow. This lever 21 is connected by means of a connecting means 18 with the abrasive 14, 15, so that by an up and down movement of the connecting means 18, the abrasive 14, 15 is changed in its angle. The change in the angle μ of the abrasive 14, 15, is determined by the cam 11, which rotates synchronously with the cutting blade 10. This makes it possible to provide the cutting surface with different cutting angles.
