Definitions

  • the present invention relates to a device for slicing a plurality of food products, in particular sausage, ham and/or cheese, a track being provided for each food product along which it is transported in the direction of a moving knife. Furthermore, the present invention relates to a method for slicing at least two food products into two separate lanes, with each food product being transported along a lane by a transport means in the direction of a cutting blade, which separates food slices from the food product.
  • the devices known from the prior art also have the disadvantage that either a complicated structure with several cutting knives is provided, or the tracks can be displaced laterally, i.e. essentially parallel to the main extension plane of the cutting knife, in order to change the food products into a slicing position to spend.
  • Devices of this type have a complicated structure, require maintenance and always have an idle time for a cutting blade when changing. In addition, it is therefore not possible to cut several food products at the same time with one cutting blade.
  • the present invention relates to a device for slicing food products such as sausage, ham and/or cheese.
  • slicing devices are also referred to as “slicers” or “high-performance slicers” by those skilled in the art.
  • These slicing devices have a moving, in particular rotating knife, which cuts off food slices from the front end of a food product.
  • the knife generally interacts with a cutting edge which is provided, for example, at the front end of a product support and which, together with the knife, defines the cutting plane in which food slices are severed from the food product.
  • There is a cutting gap between the knife and the cutting bar which should be as small as possible to prevent parts of the food product from "chopping off".
  • the cutting gap must be large enough so that the knife does not touch the cutting edge if possible.
  • the food product is transported continuously or intermittently in the direction of the cutting blade.
  • the food slices that have been cut off fall onto a storage table, for example, on which they are grouped into portions. As soon as a portion is finished, it is removed from the knife's discharge area and the slicing of a new portion can begin.
  • the slicing device is provided in multiple lanes, i. H. that several food products are cut open by a knife, in particular at least partially simultaneously or at least partially sequentially.
  • the device has its own track for each food product, along which it is transported in the direction of the knife.
  • each track can be adjusted from a loading position to a slicing position independently of the at least one other track.
  • the loading position in which the track is preferably at least partially lowered, it is loaded with a new food product to be sliced.
  • the food product is sliced in the slicing position, in which the track is preferably inclined relative to the horizontal in such a way that the track slopes down in the direction of the knife.
  • each lane can switch between the positions individually, it is possible to load a lane with a new food product while the food product in the other lane is still being sliced, so that there is a continuous product stream of cut-off food slices, so that the the buffer capacity to be provided in the line is at least reduced and/or the output of the downstream packaging machine does not have to be reduced.
  • the angle of inclination of the respective track is preferably adjustable.
  • Each track preferably has a conveyor, for example a belt conveyor or an endless belt, which can be driven independently of the conveyors of the other tracks. This allows the thickness of the slices that are cut off to be freely selected in each track. Also, loading a lane with a new food product can be independent of the other lane.
  • each track preferably has a gripper with which the end of the food product facing away from the cutting blade can be gripped in the respective track. This gripping preferably takes place towards the end of the cutting of the respective food product in order to stabilize the end piece of the food product during cutting and/or to dispose of the remaining piece that cannot be cut open.
  • Each gripper can preferably be operated and/or driven independently of the other grippers.
  • a gripper is preferably provided in each track, with which the rear end of the food product is gripped. With this gripper, the food product can be transported in the direction of the cutting blade. In particular, however, the gripper serves to stabilize the food product when its slicing has already progressed very far and/or to transport an end piece that has not been sliced away from the knife.
  • the tracks preferably have a common axis of rotation about which they can be rotated from the loading to the slicing position and vice versa, with each track particularly preferably having its own drive and/or gearing, so that two tracks can be transferred to the respective position independently of one another are.
  • the device has a storage table on which the food slices that have been cut off are configured into portions.
  • the delivery table can be moved horizontally transversely to the transport direction of the food products, so that food slices that are cut in different tracks can be deposited at the same place on the delivery table.
  • the tracks are preferably fixed transversely to the direction of the cutting blade, ie in particular not movable. Continuous operation is advantageously possible in this way, since a food product in one lane can be sliced open in the slicing position, while another lane can be adjusted into a loading position without the cutting blade having to be idle during the adjustment time.
  • the tracks are adjustable only in their angle of inclination, that is to say essentially stationary in directions parallel and/or perpendicular to the cutting blade.
  • the person skilled in the art understands that this does not apply in particular to conveying means and/or grippers in order to ensure food product feeding.
  • the device has precisely one cutting blade.
  • a track correction tape is provided downstream of the slicing device, with which portions can be shifted from one track to another track.
  • the slicing device preferably has a sensor which determines the portion of each food product that has not yet been sliced. Based on the signal from this sensor, a controller preferably controls the feed and/or the reloading of each track in such a way that portions are cut open continuously.
  • Another object of the present invention is a method according to claim 9.
  • the slicing device preferably has two, three, four or even more product lines, which can each be loaded with a food product that is transported along the line in the direction of the cutting blade.
  • the food products can be sliced, at least temporarily, simultaneously or sequentially.
  • the feed in each track can be adjusted individually, so the thickness of the slices that are separated from the respective food product can be different.
  • the slicing device has three product routes, for example, two food products can be sliced while the third route is being reloaded. In the time when a new food product is then placed in this line, the other two lines are reloaded, etc. With four or more lines, a similar procedure is conceivable, with four lines being able to load two and two to be cut open.
  • Each route preferably has a gripper with which the end of the food product facing away from the knife can be gripped. These grippers can preferably be operated and/or driven independently of one another.
  • FIG 1 shows a slicing device 5.
  • the slicing device 5 has a knife 11 which cuts a food product 2 into food slices 12 .
  • each food product 2 is transported continuously or intermittently in the direction of the cutting plane 6 of the blade 11 by means of a conveyor 4, here two conveyor belts 4.
  • the lower conveyor belt 4 is also a product support.
  • the cutting blade 11 is attached to a rotating blade holder 3 and acts with a cutting edge 9 (cf. figure 2 ) intersecting together, which is provided, for example, at the front end of a product support 4 and which together define the cutting plane 6.
  • This gap must be adjusted periodically. This can be done by moving the knife and/or the cutting edge. In addition, the cutting edge must be aligned parallel to the knife.
  • the food slices After being cut off, the food slices generally fall onto a storage table 1, which is provided with transport means, on which they are each configured into a portion 14, in this case a stack. The finished portions 14 are then transported away from the cutting blade area and then packaged.
  • the slice thickness results from the feed distance of the food product between two cuts. With a constant speed of rotation of the knife, the thickness of the slices is controlled via the feed speed of the food product.
  • the slicing device can have a gripper (not shown) per feed line, which grips the rear end 13 of the food product 2 before or during the slicing and stabilizes it during the slicing.
  • the slicing device is provided in multiple lanes, i. H. that several food products 2 are cut open by a knife, in particular at least temporarily simultaneously or at least temporarily sequentially.
  • the device has its own track 7 for each food product, along which it is transported in the direction of the blade 11 .
  • each track 7 can be adjusted from a loading position 8 into a slicing position 10 independently of the at least one other track. In the loading position 8, in which the track is preferably at least partially lowered, it is loaded with a new food product 2 to be sliced.
  • the food product is sliced open in the slicing position 10, in which the track is preferably inclined relative to the horizontal in such a way that the track slopes down in the direction of the knife. Because each lane 7 can switch between the positions individually, it is possible to load a lane with a new food product while the food product in the other lane is still being sliced, so that there is a continuous product stream of cut-off food slices, so that the buffer capacity to be provided in the line is at least reduced and/or the output of the downstream packaging machine does not have to be reduced.
  • the tracks 7 are immovable, i.e. fixed, in a direction substantially parallel to the cutting blade.
  • figure 2 shows details of the slicing device according to the invention.
  • the slicing device according to the invention is designed with two tracks in the present case, ie has two tracks 7, each of which is provided with its own transport means 4, with which a food product 2 can be moved in the direction of the knife independently of the other track is.
  • each track is designed in such a way that it can be transferred from a loading position 8 to a loading position 10 independently of the other track, which is done in the present case by rotating or pivoting the respective track.
  • Figure 2a shows both lanes in the loading position 8. Then one lane is raised to the loading position and the food product is transported by the transport means in the direction of the cutting knife and sliced open there (cf. Figure 2b ). As soon as the slicing of this block of food has reached a certain degree of progress, the other lane is also moved to the slicing position 10 and the product 2 is transported in the direction of the knife, but not yet sliced, which in Figure 2c is shown. The slicing only begins when the other product has been at least largely sliced. As soon as this product has been cut, the other product is cut and the other lane brought back to the loading position 8 (cf. Figure 2d) and provided with a new product (cf. Figure 2e ). This makes it possible to generate a continuous flow of sliced food.
