Description
Die vorliegende Erfindung betrifft eine Vorrichtung zum Aufschneiden von mehreren Lebensmittelprodukten, insbesondere Wurst, Schinken und/oder Käse, wobei für jedes Lebensmittelprodukt jeweils eine Spur vorgesehen ist, entlang derer es in Richtung eines sich bewegenden Messers transportiert wird. Des Weiteren betrifft die vorliegende Erfindung ein Verfahren zum Aufschneiden von mindestens zwei Lebensmittelprodukten in zwei separaten Spuren, wobei jedes Lebensmittelprodukt entlang einer Spur von einem Transportmittel in Richtung eines Schneidmessers transportiert wird, das Lebensmittelscheiben von dem Lebensmittelprodukt abtrennt.The present invention relates to a device for slicing a plurality of food products, in particular sausage, ham and/or cheese, a track being provided for each food product along which it is transported in the direction of a moving knife. Die vorliegende Erfindung betrifft eine Vorrichtung zum Aufschneiden von Lebensmittelprodukten, wie beispielsweise Wurst, Schinken und/oder Käse. Derartige Aufschneidevorrichtungen werden von dem Fachmann auch als "Slicer" oder "Hochleistungsslicer" bezeichnet. Diese Aufschneidevorrichtungen weisen ein sich bewegendes, insbesondere drehendes Messer auf, das von dem vorderen Ende eines Lebensmittelproduktes Lebensmittelscheiben abschneidet. Dabei wirkt das Messer in der Regel mit einer Schneidkante zusammen, die beispielsweise am vorderen Ende einer Produktauflage vorgesehen ist und die gemeinsam mit dem Messer die Schneidebene definiert, in der Lebensmittelscheiben von dem Lebensmittelprodukt abgetrennt werden. Zwischen dem Messer und der Schneidleiste befindet sich ein Schneidspalt, der so klein wie möglich sein sollte, um ein "Abhacken" von Teilen des Lebensmittelproduktes zu verhindern. Der Schneidspalt muss aber so groß sein, dass das Messer die Schneidkante möglichst nicht berührt. Beim Aufschneiden wird das Lebensmittelprodukt kontinuierlich oder intermittierend in Richtung des Schneidmessers transportiert. Die abgeschnittenen Lebensmittelscheiben fallen beispielsweise auf einen Ablagetisch, auf dem sie zu Portionen zusammengefasst werden. Sobald eine Portion fertiggestellt ist, wird sie aus dem Abwurfbereich des Messers entfernt und der Aufschnitt einer neuen Portion kann beginnen. Erfindungsgemäß ist die Aufschneidevorrichtung mehrspurig vorgesehen, d. h. dass mehrere Lebensmittelprodukte von einem Messer, insbesondere zumindest teilweise gleichzeitig oder zumindest teilweise sequentiell, aufgeschnitten werden. Dafür weist die Vorrichtung für jedes Lebensmittelprodukt eine eigene Spur auf, entlang derer es in Richtung des Messers transportiert wird. Weiterhin erfindungsgemäß ist nun vorgesehen, dass jede Spur unabhängig von der mindestens einen anderen Spur von einer Beschickungs- in eine Aufschneideposition verstellbar vorgesehen ist. In der Beschickungsposition, in der die Spur vorzugsweise zumindest teilweise abgesenkt ist, wird sie mit einem neuen aufzuschneidenden Lebensmittelprodukt beladen. In der Aufschneideposition, in der die Spur vorzugsweise gegenüber der Horizontalen so geneigt ist, dass die Spur in Richtung des Messers abfällt, wird das Lebensmittelprodukt aufgeschnitten. Dadurch, dass jede Spur individuell zwischen den Positionen wechseln kann, ist es möglich, eine Spur mit einem neuen Lebensmittelprodukt zu beschicken, während das Lebensmittelprodukt in der anderen Spur noch aufgeschnitten wird, so dass ein kontinuierlicher Produktstrom an abgeschnittenen Lebensmittelscheiben gegeben ist, so dass die in der Linie vorzusehende Pufferkapazität zumindest vermindert und/oder die Leistung der nachfolgenden Verpackungsmaschine nicht reduziert werden muss.The present invention relates to a device for slicing food products such as sausage, ham and/or cheese. Jede Trasse weist vorzugsweise einen Greifer auf, mit dem das dem Messer abgewandte Ende des Lebensmittelproduktes ergriffen werden kann. Erfindungsgemäß ist die Aufschneidevorrichtung mehrspurig vorgesehen, d. h. dass mehrere Lebensmittelprodukte 2 von einem Messer, insbesondere zumindest zeitweise gleichzeitig oder zumindest zeitweise sequentiell, aufgeschnitten werden. Dafür weist die Vorrichtung für jedes Lebensmittelprodukt eine eigene Spur 7 auf, entlang derer es in Richtung des Messers 11 transportiert wird. Weiterhin erfindungsgemäß ist nun vorgesehen, dass jede Spur 7 unabhängig von der mindestens einen anderen Spur von einer Beschickungsposition 8 in eine Aufschneideposition 10 verstellbar vorgesehen ist. In der Beschickungsposition 8, in der die Spur vorzugsweise zumindest teilweise abgesenkt ist, wird sie mit einem neuen aufzuschneidenden Lebensmittelprodukt 2 beladen. In der Aufschneideposition 10, in der die Spur vorzugsweise gegenüber der Horizontalen so geneigt ist, dass die Spur in Richtung des Messers abfällt, wird das Lebensmittelprodukt aufgeschnitten. Dadurch, dass jede Spur 7 individuell zwischen den Positionen wechseln kann, ist es möglich, eine Spur mit einem neuen Lebensmittelprodukt zu beschicken, während das Lebensmittelprodukt in der anderen Spur noch aufgeschnitten wird, so dass ein kontinuierlicher Produktstrom an abgeschnittenen Lebensmittelscheiben gegeben ist, so dass die in der Linie vorzusehende Pufferkapazität zumindest vermindert wird und/oder die Leistung der nachfolgenden Verpackungsmaschine nicht reduziert werden muss. Claims (9)
