Definitions

  • the invention relates to a cutting machine with which bread, cheese and the like can be cut into slices of any thickness by machine.
  • the cutting machine according to the invention can in particular be a disk cutting machine or a gate cutting machine.
  • a slicing machine for cutting a strand of food into slices is known.
  • This cutting machine has a circular cutting knife that can rotate around its central axis and can also be swiveled around in a circular path. During this pivoting movement, it is passed through the string-shaped foodstuff to be cut into slices.
  • the string-shaped food is fed to the cutting knife in a channel-like shaft and cut into slices.
  • the cut slices are stored standing on a storage area downstream of the cutting knife in the conveying direction.
  • the storage surface for the cut slices and the storage surface for the not yet sliced food strand lie in a plane which is oriented obliquely in space.
  • the storage device for the cut slices can vibrate. As a result, the slice cut in each case can be easily detached from the cutting knife and does not adhere to the same.
  • the gate cutting machine has a motor drive for a feed bar with which a food item is pushed through a cutting device made up of two knife gates. This motor drive works continuously so that the bread is transported through the cutting device at a constant speed.
  • the cutting machines known in the prior art are each designed as free-standing devices with a housing. Now that the furnishings in cafes and bakeries have recently become more and more sophisticated and visually appealing, the demands on the optical design of a cutting machine that is used in the corresponding shops are also increasing. The cutting machines should increasingly be able to be integrated into the shop counter, in particular an installation of the cutting machine would be desirable.
  • the invention is based on the object of specifying an improved cutting machine that can be integrated into the counter substructure of a shop so that the cutting machine can be operated with eye contact with the customer.
  • the cutting machine according to the invention has at least one cutting knife and at least one motor drive for the cutting knife.
  • the cutting machine is in particular releasably attached to a base frame. According to the invention, the cutting machine as a whole can be moved at least a little way out of the base frame. Alternatively or additionally, only parts of the cutting machine could be moved out of the base frame.
  • This base frame of the cutting machine can preferably be fixed on a base or on a piece of furniture, for example on a shop counter or on other built-in furniture. Such a fixation could, however, also be dispensed with, for example if the base frame is made sufficiently heavy to prevent the cutting machine from tilting even in its open position.
  • the cutting machine could thus be installed in shop furniture, for example in a counter substructure or in a shop shelf.
  • a first position in which the cutting machine is present within the base frame and thus in a closed position, the cutting machine can be virtually invisible, since the front of the cutting machine can be completely covered by the cladding.
  • the entire cutting machine and / or parts of the cutting machine can be moved by opening the casing.
  • integrating the cutting machine into a counter substructure also saves the space on the rear side of the counter where the cutting machine was previously was arranged.
  • the space above an integrated cutting machine can also be used more effectively than the space above a free-standing cutting machine, since a free-standing cutting machine usually requires a certain amount of space above the loading area so that the operator of the cutting machine can lean his head over the loading area.
  • the food to be cut can be placed in the cutting machine.
  • the strand of food is then cut.
  • the cutting machine can be opened twice in the same way for inserting the uncut strand of food and removing the cut strand of food.
  • the cutting machine could first be moved completely out of the base frame in order to be able to insert the uncut food into the cutting machine. A drawer or a flap could then be opened, for example, so that the sliced food is accessible without the entire cutting machine having to be moved.
  • the cutting machine or parts of the cutting machine can be designed to be longitudinally displaceable in a first embodiment, so that the cutting machine as a whole and / or at least parts of the cutting machine can be pushed out at least a little bit from the base frame. This could be achieved, for example, in that the cutting machine is present in a type of drawer. If only parts of the cutting machine should be designed to be longitudinally displaceable, these parts could also be designed like drawers.
  • the cutting machine or parts of the cutting machine could be designed to be vertically displaceable, so that the cutting machine as a whole and / or at least parts of the cutting machine can be lifted out of the base frame at least a little. This could be done, for example, by means of appropriate telescopic beams or concertina bars.
  • the cutting machine or parts of the cutting machine can be designed to be pivotable, so that the cutting machine as a whole and / or at least parts of the cutting machine can be pivoted at least a little bit out of the base frame.
  • the cutting machine or part of the same could be pivoted both about a horizontal axis and about a vertical axis.
  • part of the cladding of the cutting machine could be folded away together with the cutting machine or part of the same.
  • a part of the cladding could be pivoted together with the receiving unit in comparison to a door.
  • a receiving unit for the food to be cut can in particular be designed to be movable.
  • This receiving unit should be designed so that it is possible to receive the food to be cut.
  • the food to be cut can then be actively or passively transported further by the receiving unit until it has arrived at the correct position for the start of the cutting process. This could be done for example by a conveyor belt, a conveyor chute or a gripper arm.
  • the foodstuff it would also be possible for the foodstuff to be cut to be in its correct position for the cutting process when it is inserted into the receiving unit as soon as the receiving unit has been correctly reinserted into the cutting machine.
  • the receiving unit could, for example, be designed comparatively to a drawer. If the drawer with the receiving unit is closed again, the inserted food can be cut in the cutting machine. By opening the drawer again, it could be possible in this exemplary embodiment to also remove the cut food. However, it would also be possible to provide for the removal of the cut food, for example via a second drawer.
  • the cutting machine does not have to have a complete housing if the cutting machine is to be installed in a shop counter, for example.
  • the base frame of the cutting machine must be able to be set up in such a stable manner that tilting or slipping of the base frame can be excluded even when the entire cutting machine or at least some parts of the cutting machine move.
  • This can be done for example by one or more screw fastenings. These screw fastenings can fix the base frame, for example, on the ground or on a wall.
  • the base frame could be clamped between two walls or a floor and a ceiling by means of one or more telescopic rods. Such a clamping could for example also take place on the inner surfaces of a shelf unit or cabinet.
  • the cutting machine In order to make it easier to transport and set up the cutting machine, it can be equipped with several castors, which in particular can be attached to the base frame.
  • the castors also enable the cutting machine to be moved easily so that it can be removed from the cladding for cleaning or maintenance purposes, for example.
  • parts of the cutting machine can move in such a way that all components that could pose a risk of injury to the user remain within the base frame, so that these components are not free are accessible.
  • This can in particular relate to the at least one cutting knife and the at least one motor drive for the cutting knife.
  • the successively cut slices of the strand of food are usually stored in a storage device of the cutting machine. After the cutting process has ended, the cut slices can be removed from the storage device.
  • the bottom of the storage device can have at least one slot on the removal side. The slot thus begins on the side of the bearing device opposite the at least one cutting knife.
  • One side of a package, in particular a bag or pouch, into which the cut strand of food is to be packed, can be inserted into this slot.
  • a single slot can be sufficient to significantly facilitate the packaging process for the strand of food. If a large number of different foods are to be cut, which have different lengths and widths, it can be advantageous to provide several slots in the bottom of the storage device in order to facilitate the packaging of the cut strand.
  • At least one side of the bottom of the storage device can be raised at least a little. Packing the cut strand of food can also be made easier by lifting the bottom. In this case, the packaging for the cut strand of food can be pulled under the raised floor of the storage device, so that the strand of food only has to be pushed into the packaging.
  • the storage unit for the cut food can also be used as an alternative or in addition to the receiving unit be designed to be movable.
  • the bearing device can be part of the receiving unit so that the cutting machine only has one movable component, which reduces the need for maintenance.
  • the bearing device could be movable separately from the receiving unit.
  • the casing of the cutting machine could be opened in a first way in order to be able to reach the receiving unit and to place a foodstuff to be cut in the receiving unit.
  • the cladding of the cutting machine could be opened in a second way in order to be able to remove the cut strand of food.
  • the storage device can in particular be designed in the manner of a drawer and thus be mounted so that it is longitudinally displaceable, so that the cut strand of food remains intact during movement and no slices can tip over or get lost.
  • the storage device can open automatically after the end of the cutting process and offer the cut strand of food for removal. If there is a movement of the entire cutting machine, this movement of the cutting machine can also take place automatically after the end of the cutting process. Alternatively or in addition, the end of the cutting process could be announced by an optical and / or acoustic signal.
  • the cutting machine according to the invention is an automatic cutting machine for commercial use, in particular in bakeries, in bakery branches, in bakery shops or in self-service points of sale, for example in the supermarket or in the discounter.
  • This can in particular be a slicing machine or a gate cutting machine.
  • FIGS Figs. 1 to 5 A first embodiment of the cutting machine 10 according to the invention is shown in FIGS Figs. 1 to 5 shown.
  • the cutting machine 10 is built into a sales counter 12. Instead of the sales counter 12, the cutting machine could also be built into other furniture in a shop.
  • the cutting machine 10 is designed as a disk cutting machine with a circular knife 14.
  • the circular knife 14 is mounted in the usual way on a swing arm which is moved by a motor drive 16.
  • the motor drive 16 also allows the circular knife 14 to rotate.
  • the cutting machine 10 has a lower channel wall 20 which can receive the underside of a food item 18 to be cut.
  • the lower duct wall 20 is horizontal in the present example educated.
  • the lower duct wall 20 is present approximately at right angles to a front duct wall.
  • the lower duct wall 20 and the front duct wall are delimited on the front side of the cutting machine 10 by a cover 22.
  • the cover 22 is part of the cladding of the sales counter 12.
  • the cutting machine 10 When the cutting machine 10 is closed ( Fig. 1 , Fig. 3 and Fig. 4 ) the cutting machine 10 is completely integrated into the sales counter 12 and enclosed by the cladding of the sales counter 12. The cutting machine 10 is thus virtually invisible in the closed state and can therefore be integrated into a shop in a visually appealing manner.
  • a separate housing for the cutting machine 10 By installing the cutting machine 10 in the sales counter 12, a separate housing for the cutting machine 10 can be dispensed with. In contrast to the exemplary embodiment shown in the drawing, however, a separate housing could also be provided for the cutting machine 10.
  • the lower channel wall 20 could be inclined slightly forward so that the cut strand of food and the strand of food to be cut 18 lie on the one hand on the lower channel wall 20 and on the other hand against the front channel wall.
  • the angle of inclination of the lower duct wall 20 should in this case preferably be between 5 degrees and 50 degrees.
  • the lower duct wall 20 and the front duct wall would also be aligned approximately at right angles to one another in this example. This means that the front channel wall is inclined into the interior of the cutting machine 10 from the front.
  • the lower channel wall 20 and the front channel wall thus form a downwardly tapering V-shaped storage surface for the not yet sliced food 18 on the one hand and for the cut slices of the food in question on the other.
  • the lower duct wall 20 has an approximately perpendicular slot 24 for the circular knife 14.
  • the circular knife 14 migrates through the slot 24 in the lower channel wall 20, so that the food present in the area of the slot 24 is cut at this point.
  • a slice of food is then created to the left of this slot 24.
  • To cut the food strand 18 is pushed by a transport slide 26 in the direction of the slot 24.
  • the transport pusher 26 has a plurality of claws lying next to one another which, during the cutting process, pierce the end of the food 18 from above with sufficient strength.
  • a slice support 28 is arranged behind the slot 24.
  • the pane support 28 is pivotably mounted on an axis 30 so that subsequent panes can move the pane support 28 accordingly.
  • the area of the lower channel wall 20 on the left in the drawing is thus designed as a storage device 32 for storing the cut slices of the strand of food.
  • the lower channel wall 20 has a plurality of slots 34 on its left side in the drawing - in the area of the bearing device 32 - on the removal side.
  • a package in particular a pouch or bag, can be inserted into the slots 34 in such a way that the cut slices of the strand of food come to lie in the package.
  • the packaging, together with the cut slices, can then be pulled out of the slots 34.
  • the cutting machine 10 is attached to a base frame 36.
  • the base frame 36 has four castors 38.
  • the castors 38 facilitate the transport of the cutting machine 10, for example during installation or when the cutting machine 10 is removed for maintenance purposes.
  • the lower channel wall 20, the front channel wall and the transport slide 26 are mounted on the cutting machine 10 such that they are longitudinally displaceable in the manner of a drawer. Part of the cutting machine 10 can thus be moved out of the base frame 36.
  • This movable part of the cutting machine can be referred to as the receiving unit 40, since the food 18 to be cut can be placed on the lower channel wall 20.
  • the bearing device 32 is also part of the receiving unit 40.
  • the receiving unit 40 is freely accessible and the food to be cut can be placed on the lower channel wall 20. In this position, the circular knife 14 could not reach the inserted food 18.
  • the lower channel wall 20 is displaced so that the circular knife 14 can cut the inserted food 18 into slices through the slot 24. After the cutting process, the cover 22 can be opened again in order to be able to remove the cut slices that are present on the storage device 32.
  • the food 18 is already inserted in the position in which the food 18 is also cut, without the food being transported further - apart from the closing of the receiving unit 40.
  • the receiving unit could, for example, also consist only of an inclined further channel wall on which the inserted food would slide onto the channel wall 20.
  • the bearing device 32 is designed in one piece as a component of the receiving unit 40.
  • the bearing device 32 can only be moved together with the receiving unit 40.
  • the bearing device could also be designed separately from the receiving unit.
  • both the storage device and the receiving unit could be moved separately from one another.
  • FIG. 6 to 9 a second embodiment of the cutting machine 10.2 according to the invention is shown.
  • the cutting machine 10.2 is also shown installed in a sales counter 12.2.
  • the cutting machine 10.2 is constructed as a disk cutting machine.
  • the lower channel wall 20, the front channel wall and the transport slide 26 of the cutting machine 10.2 form the receiving unit 40.2 for the food 18 to be cut.
  • This receiving unit 40.2 can be pivoted about a lower axis 44 in the present case. If the panel 22.2 is pivoted downward by means of the handle 42 and thus opened, the receiving unit 40.2 is freely accessible.
  • the storage device 32.2 for the cut strand of food is designed as part of the receiving unit 40.2 and can therefore only be moved together with the receiving unit 40.2.
  • two doors 46, 48 are present in the cladding of the sales counter 12.2.
  • the doors 46, 48 can be opened together or separately from one another.
  • the crumb container 50 of the cutting machine 10.2 becomes accessible, so that it can be easily emptied.
  • the circular knife 14, among other things and the motor drive 16 of the cutting machine 10.2 is exposed. This can be necessary, for example, for maintenance purposes, for cleaning the circular knife 14 or in the event of a repair.
  • a single door that covers both the crumb container 50 and the circular knife 14 and motorized drive 16 could also be sufficient. It would also be possible to make the cladding of the sales counter 12.2 removable in this area, so that the cladding can be removed, for example in order to empty the crumb container 50.
  • FIG Fig. 10 A third embodiment of the cutting machine 10.3 according to the invention is shown in FIG Fig. 10 shown.
  • the cutting machine 10.3 is also shown installed in a sales counter 12.3.
  • the cutting machine 10.3 is again constructed as a disk cutting machine.
  • the entire cutting machine 10.3 can be pivoted about a lower axis 44.3.
  • the open position which is in Fig. 10 is shown, the food to be cut 18 can be placed in the cutting machine 10.3. Even if cutting the food would theoretically be possible in this open position, since the cutting machine 10.3 is moved as a whole, in the present example the cutting function is blocked for safety reasons in order to exclude the risk of injury from the circular knife rotating during cutting. Since the cutting machine does not have to be completely removed from the base frame 36, depending on the movement of the cutting machine made when the cladding is opened, the food 18 could also be cut in this open position, provided there is no risk of injury to the user.
  • FIGS Figures 11 and 12 A fourth embodiment of the cutting machine 10.4 according to the invention is shown in FIGS Figures 11 and 12 shown.
  • the cutting machine 10.4 designed as a disk cutting machine is shown installed in a sales counter 12.4.
  • This embodiment is comparable to the embodiment according to FIG Figs. 1 to 5 only part of the cutting machine 10.4 - the receiving unit 40.4 - is moved out of the base frame 36.
  • the receiving unit 40.4 is first displaced in the present example, comparable to pulling out a drawer. During this shift, the receiving unit 40.4 is raised by a certain amount, so that the receiving unit can be easily reached by the user without the user having to bend down.
  • the movement can be supported, for example by an electric motor or a hydraulic drive. This can also ensure that the weight of the cutting machine is stabilized and held in the open position, so that the cutting machine does not have to be held manually. It would also be possible to move the cutting machine completely automatically. In this case, the cutting machine could be moved into its open position after actuating a corresponding switch or button, without the casing having to be opened by means of the handle 42. The cutting machine could also be closed in this way. Such support for the movement would be possible both in the case in which the cutting machine is moved as a whole and in the case in which only part of the cutting machine is moved.
