  • the potato pieces will, even if they are pre-fried, still have some content of water and oleaginous components, which during heating of the potato pieces partly are emitted in form of vapour.
  • the renewing of the air is in this case performed by means of the air exhauster 36, which during operation is generating a flow of air through the cabinet from the opening below the chain 2 to the opening 35 at the top of the cabinet.

Claims (13)

  1. Four pour soumettre à un traitement thermique des denrées alimentaires placées sur une grille (13) dans une chambre (1) au moyen d'une source de chaleur (34), la source de chaleur et la grille étant comprises dans le four, la grille étant constituée d'une partie supérieure (13) d'une grille (2) sous la forme d'une chaîne sans fin qui défile autour d'un certain nombre de supports de chaîne (4, 5, 6 ; 42, 43, 44), les supports inférieur et supérieur (4, 5) définissant les extrémités inférieure et supérieure de ladite partie de chaîne supérieure, caractérisé en ce que le four comprend des moyens d'entraînement (23, 20, 21, 17) conçus pour mettre la partie de chaîne supérieure (13) en mouvement dans la direction du support de chaîne supérieur (5) au cours du traitement thermique d'une portion des denrées alimentaires et dans la direction du support de chaîne inférieur (4) au cours de l'évacuation des denrées alimentaires prêtes à l'emploi après avoir subi un traitement thermique.
  2. Four selon la revendication 1, caractérisé en ce qu'au moins un des supports de chaîne (4, 5, 6 ; 42, 43, 44) est un galet rotatif (42, 43, 44).
  3. Four selon la revendication 2, caractérisé en ce qu'au moins un disque rotatif (60) est placé de chaque côté de la grille (2) sous forme de chaîne entre les galets inférieur et supérieur (42, 43), de telle sorte que le disque s'appuie contre le côté supérieur de la partie de chaîne supérieure (13).
  4. Four selon la revendication 3, caractérisé en ce qu'une partie de la partie de chaîne supérieure (13) s'étend en formant une courbe qui suit une longueur d'arc de la périphérie dudit au moins un disque rotatif (60).
  5. Four selon l'une quelconque des revendications 1 à 4, caractérisé en ce que le four comprend un cadre (3) pour le montage rotatif des supports de chaîne (4, 5, 6 ; 42, 43, 44) sur la chaîne (2).
  6. Four selon la revendication 5, caractérisé en ce que le cadre comprend les supports de chaîne (4, 5, 6 ; 42, 43, 44) et deux membres latéraux (8).
  7. Four selon la revendication 5 ou 6, caractérisé en ce que le cadre (3) est monté de manière amovible dans la chambre (1).
  8. Four selon l'une quelconque des revendications 1 à 7, caractérisé en ce que la chambre (1) comprend une ouverture d'accès (30) et un couvercle (31) pour recouvrir l'ouverture d'accès au moins au cours du traitement thermique des denrées alimentaires.
  9. Four selon la revendication 8, caractérisé en ce que l'ouverture d'accès forme un angle avec le plan horizontal.
  10. Four selon la revendication 8 ou 9, caractérisé en ce que le couvercle (31) est monté sur la chambre (1) au moyen d'au moins une articulation (32).
  11. Four selon l'une quelconque des revendications 8 à 10, caractérisé en ce que la source de chaleur (34) est montée sur le couvercle (31) et fait face à la partie de chaîne supérieure (13) dans la position fermée du couvercle.
  12. Four selon l'une quelconque des revendications 1 à 11, caractérisé en ce que le four comprend un ventilateur (36) pour générer un courant d'air à travers la chambre (1) au moins au cours d'une opération de traitement thermique.
  13. Utilisation du four selon l'une quelconque des revendications 1 à 12, pour le traitement thermique de denrées alimentaires telles que des pommes de terre frites.
