Abstract

Procédé de cuisson de produits (100) dans un four (1) à céramique, ledit four (1) comportant au moins un brûleur (4) à flamme muni d'au moins un conduit (46, 6) d'alimentation en comburant, un conduit (43, 8) d'évacuation des gaz chauds issus du four et un échangeur (40, 42) de chaleur destiné à réaliser un échange de chaleur entre le fluide circulant dans le conduit (46, 6) d'alimentation et le conduit (43, 8) d'évacuation. Le procédé comporte l'étape consistant à refroidir les produits (100) par injection d'un fluide de refroidissement dans le four, via le conduit (43, 8) d'évacuation du ou des brûleurs (4), lorsque le brûleur (4) est éteint.
