  • restrictions 53, 55 of side portions define zones between baffle 16 and the rear wall 12 of the cooking chamber in which air flow is redirected to be distributed evenly, thereby avoiding unevenness in air velocity and allowing a more uniformly distributed heat exchange.
  • restrictions 53, 55 of side portions 54, 56 helps to optimize the air flow distribution since, on one side air is delivered to a zone in which the profile is linear and does not oppose obstacles to flow and, on the other side air flow, following the curvilinear profile, doesn't allow the air flow boundary layer to detach from the baffle wall, and consequently air is also distributed in the portion of the baffle next to the curvilinear profile, otherwise not possible.
  • the combination of restrictions 53, 55 and asymmetry of their profiles is highly effective in generating a forced air flow evenly distributed which maximizes heat exchange, thereby maximizing heating of the cooking chamber of the oven.
  • heating elements of different length and power helps to controlling the amount and speed of heating of the cooking chamber.
  • a single heating element like element 20, 20A, 20B can typically supply a power up to 700 W.
  • Elements like 30 or 40 can typically supply a power up to 2800 W.
  • the convection cooking oven according to the invention is thus capable to provide efficient and effective cooking of food items, combined with high versatility with respect to choice of desired power of the heating element.

Claims (15)

  1. Four de cuisson comprenant une chambre de cuisson à convection (10) dans laquelle un ensemble chauffant (14) est monté, ledit ensemble chauffant comprenant un déflecteur (16), un ventilateur et au moins un élément chauffant électrique (20 ; 20A ; 20B ; 30 ; 40), ledit déflecteur (16) étant pourvu d'entrées d'air (18) et de sorties d'air (19, 19') en communication avec ladite chambre de cuisson (10) ;
    ledit au moins un élément chauffant électrique (20 ; 20A ; 20B ; 30 ; 40) comprend une partie centrale incurvée (22 ; 32 ; 42) et des parties latérales allongées (24, 26 ; 34, 36 ; 44, 46) s'étendant à partir de ladite partie centrale ;
    ledit déflecteur (16) comprend une partie centrale (52) positionnée par-dessus ledit ventilateur et ladite partie centrale (22 ; 32 ; 42) dudit au moins un élément chauffant électrique (20 ; 20A ; 30 ; 40), et des parties latérales (54, 56) positionnées par-dessus lesdites parties latérales allongées (24, 26 ; 34, 36 ; 44, 46) dudit au moins un élément chauffant électrique (20 ; 20A ; 30 ; 40) ;
    lesdites entrées d'air (18) sont prévues dans ladite partie centrale (52) dudit déflecteur (16) et lesdites sorties d'air (19, 19') sont prévues dans lesdites parties latérales (54, 56) dudit déflecteur (16) ;
    moyennant quoi un écoulement d'air forcé est généré desdites entrées d'air (18) auxdites sorties d'air (19, 19') pour éliminer de façon opérationnelle de la chaleur à partir de ladite partie centrale (22 ; 32 ; 42) et desdites parties latérales (24, 26 ; 34, 36 ; 44, 46) dudit élément chauffant (20 ; 30 ; 40), caractérisé en ce que lesdites parties latérales (54, 56) dudit déflecteur (16) sont formées avec des restrictions (53, 55) dans le voisinage de ladite partie centrale (52).
  2. Four de cuisson selon la revendication 1, caractérisé en ce que ledit déflecteur (16) dudit ensemble chauffant (14) présente une forme de papillon, avec une partie centrale sensiblement circulaire (52) et des parties latérales en forme d'aile (54, 56) s'étendant à partir desdites restrictions (53, 55) jusqu'à des extrémités externes élargies (57, 59).
  3. Four de cuisson selon la revendication 1, caractérisé en ce que ladite partie centrale incurvée (22) dudit au moins un élément chauffant électrique (20, 20A, 20B) est de forme sensiblement semi-circulaire.
  4. Four de cuisson selon la revendication 1, caractérisé en ce que lesdites parties latérales (24, 26) sont incurvées et s'étendent latéralement à partir de ladite partie centrale (22) dudit au moins un élément chauffant électrique (20, 20A, 20B) et sont pourvues de plaques terminales (23, 25, 33A, 33B), dont chacun est positionnée sur un côté de ladite partie centrale (22).
  5. Four de cuisson selon la revendication 1, caractérisé en ce que ladite partie centrale (32) dudit au moins un élément chauffant électrique (30) présente une forme sensiblement circulaire.
  6. Four de cuisson selon la revendication 1, caractérisé en ce que ladite partie centrale dudit au moins un élément chauffant électrique (40) comprend un anneau (42) et lesdites parties latérales (44, 46) sont incurvées et s'étendent latéralement à partir dudit anneau (42).
  7. Four de cuisson selon la revendication 1, caractérisé en ce que lesdites restrictions (53, 55) desdites parties latérales (54, 56) sont asymétriques par rapport à un axe longitudinal (Y) s'étendant à travers le centre dudit déflecteur (16).
  8. Four de cuisson selon la revendication 2, caractérisé en ce que lesdites sorties d'air (19, 19') sont positionnées sur lesdites extrémités externes élargies (57, 59) dudit déflecteur (16).
  9. Four de cuisson selon la revendication 3, caractérisé en ce que ladite partie centrale incurvée de forme sensiblement semi-circulaire (22) dudit au moins un élément chauffant électrique (20, 20A, 20B) est montée de façon coaxiale sur ledit ventilateur à l'intérieur dudit ensemble chauffant (14).
  10. Four de cuisson selon la revendication 5, caractérisé en ce que la forme générale dudit au moins un élément chauffant électrique (30) est sensiblement celle d'un papillon, lesdites parties latérales (34, 36) sont incurvées et comportent des coudes étroits s'étendant latéralement à partir de ladite partie centrale (32) comme des ailes de papillon.
  11. Four de cuisson selon la revendication 6, caractérisé en ce que les extrémités dudit au moins un élément chauffant électrique (40) sont pourvues d'une plaque terminale (43) et sont proches l'une de l'autre en correspondance avec ledit anneau central (42) dudit au moins un élément chauffant électrique (40).
  12. Four de cuisson selon la revendication 10, caractérisé en ce que les extrémités desdites parties latérales (34, 36) sont incurvées et pourvues d'une plaque terminale (33) et sont proches l'une de l'autre sur un côté dudit au moins un élément chauffant électrique (30).
  13. Four de cuisson selon la revendication 7, caractérisé en ce que le profil inférieur (53a) d'une restriction (53) d'une (54) desdites parties latérales (54, 56) est sensiblement circulaire, et le profil inférieur (55a) de la restriction opposée (55) desdites parties latérales (54, 56) est sensiblement linéaire.
  14. Four de cuisson selon la revendication 7, caractérisé en ce que le profil supérieur (53b) d'une restriction (53) d'une (54) desdites parties latérales (54, 56) est sensiblement linéaire, et le profil supérieur (55b) de la restriction opposée (55) desdites parties latérales (54, 56) est sensiblement circulaire.
  15. Four de cuisson selon la revendication 7, 13, 14, caractérisé en ce que le profil inférieur (53a) de restriction (53) d'une desdites parties latérales (54) est sensiblement circulaire, le profil inférieur (55a) de la restriction opposée (55) desdites parties latérales est sensiblement linéaire, le profil supérieur (53b) de restriction (53) étant sensiblement linéaire et le profil supérieur (55b) de la restriction opposée (55) étant sensiblement circulaire, moyennant quoi un écoulement d'air est distribué dans une direction prédéterminée (A, A').
