Claims (17)

  1. Machine de coupe pour produits alimentaires, comprenant :
    - un couteau rotatif (1) ;
    - un chariot (2) déplaçable en va et vient ; ainsi
    - qu'une surface de support (5, 11) pour le produit à couper (7), qui est montée sur le chariot (2) de manière déplaçable, et qui peut être transférée d'une première position qui forme avec l'horizontale un angle différent de 0°, dans une deuxième position horizontale ;
    caractérisée en ce que
    - la machine de coupe comprend des moyens de rappel qui peuvent exercer une force de rappel sur la surface de support (5, 11) lors d'un mouvement de la surface de support (5, 11) de la première position dans la deuxième position.
  2. Machine de coupe selon la revendication 1,
    caractérisée en ce que la surface de support (5, 11) forme dans la première position un angle compris entre 10° et 50° avec l'horizontale, en particulier un angle compris entre 20° et 30°.
  3. Machine de coupe selon l'une quelconque des revendications 1 ou 2,
    caractérisée en ce que la surface de support (5, 11) peut pivoter autour d'un axe de pivotement (6) situé essentiellement dans le plan de la surface de support (5, 11).
  4. Machine de coupe selon l'une quelconque des revendications 1 à 3, caractérisée en ce que l'axe de pivotement (6) de la surface de support (5, 11) est essentiellement parallèle à l'axe de rotation du couteau (1).
  5. Machine de coupe selon l'une quelconque des revendications 1 à 4, caractérisée en ce que les moyens de rappel comprennent des moyens de ressort, qui permettent un pivotement de la surface d'appui (5, 11) par rapport au chariot (2) au moins en partie à l'encontre de la force des moyens de ressort.
  6. Machine de coupe selon la revendication 5,
    caractérisée en ce que les moyens de ressort sont configurés de telle sorte, ou sont incorporés de telle sorte que la force de ressort active, agissant au moins en partie à l'encontre du pivotement de la surface de support (5, 11), puisse être modifiée.
  7. Machine de coupe selon l'une quelconque des revendications 1 à 4, caractérisée en ce que les moyens de rappel comprennent au moins deux aimants (18, 19, 21, 22), qui permettent un pivotement de la surface de support par rapport au chariot (2) au moins en partie à l'encontre de la force des aimants (18, 19, 21, 22).
  8. Machine de coupe selon l'une quelconque des revendications 1 à 7, caractérisée en ce que le chariot (2) présente une surface d'appui arrière (3, 12, 14), le produit à couper (7) pouvant être maintenu entre la surface d'appui (3) et la surface de support (5, 11).
  9. Machine de coupe selon l'une quelconque des revendications 1 à 8, caractérisée en ce qu'au moins une partie (12, 14) de la surface d'appui arrière peut être déplacée conjointement avec la surface de support (5, 11).
  10. Machine de coupe selon la revendication 9,
    caractérisée en ce que la partie déplaçable (12, 14) de la surface d'appui arrière forme avec la surface de support (5, 11) un angle compris entre 60° et 120°, par exemple d'environ 90°.
