Abstract

Ce dispositif de production d'un pâton fourré, tel qu'un croissant ou analogue, est caractérisé en ce qu'à son point de départ se situe une feuille de pâte à plier ou à rouler (D), en ce qu'il comprend un cadre (1) pourvu d'un poste (4) à rouler la pâte, en ce qu'un système de transporteur à bande (2, 3) est monté dans le dispositif et transporte la feuille de pâte (D), dans la forme et la position voulues, vers le poste (4) à rouler la pâte, et en ce que le poste (4) à rouler la pâte est doté d'un tambour (5) le raccordant au transporteur à bande (2), de moyens de compression (12) sous la forme d'un élément sans fin (13) de matériau flexible monté au-dessus du tambour (5), et d'un rouleau d'inversion de marche (10), destiné à un transporteur d'évacuation (11), en ce qu'un rouleau de compression (16) est agencé à proximité de ce rouleau d'inversion de marche (10) du côté intérieur de l'élément sans fin (13) et en ce qu'il est porté par des moyens de réglage (17, 18), commandés à l'aide de signaux synchronisés, pour être mis d'une position où il est dégagé du transporteur d'évacuation (11) dans une position où il repose sur ce transporteur d'évacuation (11).
