       caractérisé en ce qu'il est prévu des moyens, commandant la position de pivotement de l'élément de guidage (4), pour la détection de la position d'avancement du produit alimentaire (6) à découper ou bien pour la détermination de l'étendue longitudinale, dans le sens de l'avancement (C), des zones partielles situées avant et après le plan de coupe du produit alimentaire (6) à découper, et/ou en ce qu'il est prévu des moyens, commandant la position de pivotement de l'élément de guidage (4), pour la détermination des forces agissant sur la lame de coupe (1), notamment des forces dirigées perpendiculairement au plan de coupe.
