Claims (7)

  1. Dispositif de découpage pour réaliser des portions de denrées alimentaires en morceaux, en particulier de fromage, avec une lame de couteau (5) maintenue sur un support (4) assurant le mouvement d'avance de coupe perpendiculairement au sens de l'alimentation du morceau à découper (2), lame qui présente sur son bord d'emploi, au moins d'un côté, une surface de coupe (11, 12), dispositif de découpage, caractérisé en ce que la lame de couteau (5) puisse être réglée angulairement avec son plan médian (14) en position parallèle en faisant un angle aigu par rapport au plan d'avancement du bord d'emploi et de cette façon par rapport à la surface de coupe du morceau à découper (2).
  2. Dispositif de découpage selon la revendication 1, caractérisé en ce que l'angle (β) entre le plan d'avancement du bord d'emploi et la lame de couteau (5) peut être modifié de façon continue et la lame de couteau (5) peut être fixée dans la position réglée par rapport au support (4).
  3. Dispositif de découpage selon les revendications 1 et 2, caractérisé en ce que l'inclinaison de la lame du couteau (5) peut être réglée par rapport au plan d'avancement du bord d'emploi pendant le processus de coupe en fonction des forces latérales, agissant sur la zone de coupe de la lame de couteau (5).
  4. Dispositif de découpage selon les revendication 1 à 3, caractérisé en ce que la lame de couteau (5) est maintenue sur le support (4) de façon à pouvoir pivoter autour d'un axe (15) s'étendant perpendiculairement au sens d'avancement (3) du bord d'emploi et se trouvant dans le tranchant (10) de la lame de couteau (5).
  5. Dispositif de découpage selon les revendications 1 à 4, caractérisé en ce que des butées terminales (16, 17) pouvant être montées et fixées sur la lame de couteau (5) sont disposées pour limiter la position angulaire.
  6. Dispositif de découpage selon l'une des revendications précédentes, caractérisé en ce que l'angle de réglage (β) de la lame de couteau (5) correspond au moins approximativement à l'angle (α) des surfaces de coupe (11, 12) par rapport au plan médian (14) de la lame de couteau (5).
  7. Dispositif de découpage selon la revendication 1, caractérisé en ce que sur le support (4) sont prévues des fixations pour la lame de couteau (5) dans différentes positions angulaires, pré-définies de la lame de couteau (5) par rapport au plan d'avancement du bord d'emploi.
