Die Erfindung betrifft eine Schneidvorrichtung zum Portionieren von stückigen Lebens- und Nahrungsmitteln, insbesondere von Käse, gemäß dem Oberbegriff des Anspruchs 1. Im Rahmen der Erfindung ist es auch möglich, daß die Neigung des Messerblattes in Bezug auf die Vorschubebene des Trägers 4 vor und/oder während des Schneidvorganges in Abhängigkeit von den auf den Schneidenbereich des Messerblattes 5 einwirkenden, seitlichen Kräften einstellbar auszuführen. Eine solche Übereinstimmung der Winkel β und α ist natürlich nur ganz speziell zutreffenden Kraftkomponenten gegeben, die auf den Schneidenbereich des Messerblattes 5 einwirken. Bei beidseitigen Anschliffflächen 11, 12 liegen diese vorteilhaft symmetrisch bezogen auf die Mittelebene 14 des Messerblattes 5 zueinander. Es wäre auch denkbar, daß die beiden Anschliffflächen ungleiche Schliffwinkel aufweisen, daß also die Schneide von zwei Anschliffflächen gebildet wird, die bezogen auf die Mittelebene 14 des Messerblattes 5 unsymmetrisch zueinander liegen. Dies bewirkt natürlich wieder eine entsprechende Änderung des Verstellwinkels des Messerblattes für den Schnittvorgang. Bei einem Messerblatt ist es ferner möglich, neben den Anschliffflächen 11, 12, ob diese nun ein- oder beidseitig des Messerblattes angeordnet sind, zusätzlich einen ein- oder beidseitigen Facettenanschliff vorzusehen.The measures according to the invention can of course also be used if a grinding surface for forming the cutting edge 10 is provided only on one side. Cutting device for cutting lumps of food, in particular cheese, into portions, having a knife blade (5) held - transverse to the feed direction of the piece (2) to be cut - on a support (4) that carries out the cutting forward feed motion, the knife blade having on at least one side of its inserting edge a ground face (11, 12), characterised in that the knife blade (5) is so held on the support (4) that its angle is adjustable for the parallel or acute-angled orientation of the centre plane (14) of the knife blade (5) in relation to the forward feed plane of the inserting edge and thus in relation to the cutting face of the piece (2) to be cut up.
  2. Cutting device according to claim 1, characterised in that the angle (β) between the forward feed plane of the insertion edge and the knife blade (5) is infinitely variable and the knife blade (5) is fixable relative to the support (4) in the position set.
  3. Cutting device according to claims 1 and 2, characterised in that the inclination of the knife blade (5) relative to the forward feed plane of the inserting edge during the cutting operation is adjustable as a function of the lateral forces acting on the cutting region of the knife blade (5).
  4. Cutting device according to claims 1 to 3, characterised in that the knife blade (5) is held pivotably on the support (4) about an axis (15) lying transverse to the forward feed direction of the insertion edge (3) and in the cutting edge (10) of the knife blade (5).
  5. Cutting device according to claims 1 to 4, characterised in that adjustable and fixable end stops (16, 17) for limiting the angle adjustment are associated with the knife blade (5).
  6. Cutting device according to one of the preceding claims, characterised in that the angle of adjustment (β) of the knife blade (5) corresponds at least approximately to the angle (α) of the ground faces (11, 12) relative to the centre plane (14) of the knife blade (5).
  7. Cutting device according to claim 1, characterised in that mounts for the knife blade (5) are provided on the support (4) at different, specified angular positions of the knife blade (5) relative to the forward feed plane.
