Claims (7)

  1. Four de boulangerie comportant une chambre de cuisson (3) qui peut être fermée, à partir de laquelle un conduit d'évacuation des vapeurs (9) mène à un conduit d'écoulement (11) débouchant à l'extérieur de la chambre de cuisson, à l'intérieur duquel on mélange, au moyen d'une soufflerie, la vapeur avec de l'air extérieur à la chambre de cuisson et on évacue le mélange, un filtre à graisses (13) de grande surface, dont la largeur et la longueur sont adaptées au conduit d'écoulement, étant disposé à l'intérieur du conduit d'écoulement, et celui-ci étant divisé en une chambre d'entrée et en une chambre de sortie des vapeurs, caractérisé en ce que la sortie du conduit d'évacuation des vapeurs (9) est située côté aspiration et l'entrée du conduit d'écoulement (11) est située côté refoulement de la soufflerie (10) et en ce que l'ouverture de sortie (15) de la chambre d'évacuation des vapeurs est décalée par rapport à la soufflerie (10).
  2. Four de boulangerie comportant une chambre de cuisson (3) qui peut être fermée, à partir de laquelle un conduit d'évacuation des vapeurs (9') mène à un conduit d'écoulement (11, 11c, 11e) débouchant à l'extérieur de la chambre de cuisson, à l'intérieur duquel on mélange, au moyen d'une soufflerie, la vapeur avec de l'air extérieur à la chambre de cuisson et on évacue le mélange, un filtre à graisses (13) de grande surface, dont la largeur et la longueur sont adaptées au conduit d'écoulement, étant disposé à l'intérieur du conduit d'écoulement, et celui-ci étant divisé en une chambre d'entrée et en une chambre de sortie des vapeurs, caractérisé en ce que la sortie du conduit d'évacuation des vapeurs (9') et la sortie du conduit d'écoulement (11, 11c, 11e) sont situées côté aspiration de la soufflerie (10), mais sont décalées l'une par rapport à l'autre dans la direction longitudinale du filtre à graisses (13).
  3. Four de boulangerie selon la revendication 1 ou 2, caractérisé en ce que le conduit d'écoulement (11, 11c, 11e) et le filtre à graisses (13) sont disposés essentiellement horizontalement , de préférence au -dessus de la chambre de cuisson (3).
  4. Four de boulangerie selon l'une de revendications précédentes, caractérisé en ce que le filtre à graisses (13) monté sur un cadre-support sur la carrosserie du four (4) peut être extrait horizontalement vers l'avant et peut être remplacé.
  5. Four de boulangerie selon l'une de revendications précédentes, caractérisé en ce que le conduit d'écoulement (11) est composé de deux parties (11a, b, c, d).
  6. Four de boulangerie selon la revendication 5, caractérisé en ce que la partie (11a, c) située immédiatement derrière la soufflerie (10) s'étend essentiellement horizontalement de la face arrière vers la face avant de l'appareil et la deuxième partie (11b ,d) s'étend de là jusqu'à la face arrière où se trouve l'ouverture de sortie (20).
  7. Four de boulangerie selon la revendication 6, caractérisé en ce que la séparation entre les parties est réalisée par le filtre à graisses (13).
