Description
Die Erfindung bezieht sich auf einen Backofen gemäß dem Oberbegriff des Patentanspruches 1.The invention relates to an oven according to the preamble of claim 1.
Bei derartigen Backöfen, insb. bei sogenannten Einbaubacköfen besteht das Problem, daß bei der Garbehandlung von fetthaltigen Nahrungsmitteln der aus dem Garraum nach außen abgeführte, aus einem Gemisch aus Wasserdampf, Fett und Geruchstoffen bestehende heiße Wrasen sich an kühleren Teilen in der Umgebung des Garraumes, insb. an angrenzenden Möbelteilen niederschlägt und einen sichtbaren Fettfilm hinterläßt. Man versucht diesem Problem zu begegnen, indem man den Wrasen über einen, eine katalytische Selbstreinigung bewirkenden sogenannten Nachverbrenner leitet und dann - vermischt mit kühlerer Luft aus der Umgebung des Garraumes - ins Freie ableitet. Solche Nachverbrenner sind teuer und verlieren nach längerer Betriebsdauer ihre Wirksamkeit. Bei einem bekannten Backofen gemäß US-A- 35 87 555 ist zwischen einer Wrasenauslaßöffnung einer Ofenkammer und einem Gebläse ein nach oben sich öffnender Strömungskanal vorgesehen, der in Längsrichtung von einem Fettfilter durchzogen ist. In mittlerer Höhe des Fettfilters ist ein Gebläse mit seiner Saugseite angeordnet und etwa in gleicher Höhe gegenüber des Gebläses und des Fettfilters befindet sich ein Wrasenableitkanal an der hinteren Begrenzung einer Ofenkammer, durch welchen Wrasenableitkanal hindurch der im Ofenraum entstehende Wrasen dem Fettfilter und dann dem Gebläse zugeführt wird. Es ergibt sich dabei insb. in bezug auf den fetthaltigen Wrasen eine bevorzugte Stelle am Fettfilter, an welcher der Wrasen durch das Fettfilter hindurchtritt und vom Gebläse gesammelt wird. Aufgrund dieser Strömungskonzentration sammelt sich an dieser Stelle die aus dem Wrasen ausgeschiedene fetthaltige Substanz und fließt oder tropft vom Fettfilter nach unten in einen unterhalb des Fettfilters angeordneten Fett-Auffangbehälters.In such ovens, especially in so-called built-in ovens, there is the problem that when cooking fat-containing foods, the hot vapors discharged to the outside from the cooking space, consisting of a mixture of water vapor, fat and odorous substances, build up on cooler parts in the vicinity of the cooking space, in particular on adjacent furniture parts and leaves a visible grease film. Gemäß der Erfindung wird der aus dem Garraum austretende Wrasen über einen großflächigen Fettfilter geleitet, der aufgrund der Großflächigkeit eine große Aufnahmekapazität für das auszuscheidende Fett und daher eine lange Lebensdauer hat. Bei beiden alternativen Lösungen wird mit dieser Anordnung in beiden Kammern des Strömungskanals ein langer Weg für den Wrasen erzielt, was zu einer gleichmäßigen Filterwirkung über die gesamte Filterfläche führt. Ein solcher Fettfilter kann als Papierfilter, Papiervlies oder aus Streckmetall, Kunststoff oder dergleichen bestehen und z.B. mattenartig ausgebildet sein. Der Fettfilter kann leicht austauschbar in dem Gehäuseabschnitt oberhalb des Garraumes angeordnet sein, wo er bei horizontaler Anordnung aus der Frontseite des Backofengehäuses herausgezogen und als Nachrüstteil ausgewechselt werden kann. Der Wrasen wird hierbei mit kühlerer Nebenluft aus der Umgebung des Garraumes vermischt, wobei ein Mischungsverhältnis eingestellt wird, bei dem der Taupunkt möglichst unter der Raumtemperatur liegt. In den Figuren 1 und 2 ist mit 1 eine Backofenmuffel bezeichnet, die durch eine Backofentür 2 verschließbar ist und die einen Garraum 3 umschließt. Die Backofenmuffel 1 ist eingebaut in ein Backofengehäuse 4, das oberhalb der Backofenmuffel 1 frontseitig mit Bedienelementen 5 und entsprechenden Anzeigeelementen versehen ist. Hinter einem sogenannten Prallblech 6 ist ein von einem nicht dargestellten Antriebsmotor angetriebenes Gebläserad 7 eines Umluftgebläses angeordnet, wobei die Prallwand 6 z.B. oben und unten bzw. seitliche Strömungsschlitze 8 und in Höhe des Gebläserades Ansaugöffnungen besitzt. An der Rückseite der Backofenmuffel 1 befindet sich ein nach oben gerichteter Wrasenableitkanal 9, durch den hindurch der bei Betrieb des Backofens entstehende heiße und fetthaltige Wrasen nach oben abströmen kann. Oberhalb der oberen Öffnung des Wrasenableitkanales 9 ist im Inneren des Backofengehäuses 4 ein Kühlgebläse 10 angeordnet, das durch einen ebenfalls nicht dargestellten Motor angetrieben wird. Während sich der Wrasenableitkanal 9 auf der Saugseite des Kühlgebläses 10 befindet, schließt sich an die Druckseite des Kühlgebläses 10 ein Strömungskanal 11 an, begrenzt durch Kanalwände 12.In Figures 1 and 2, 1 denotes an oven muffle, which can be closed by an
Beim Ausführungsbeispiel gemäß Fig. 1 wird der Strömungskanal 11 in etwa horizontal durchzogen von einem großflächigen Fettfilter 13, der in an sich bekannter Weise so ausgebildet ist, daß er eine Durchströmung durch ein Gemisch aus Wrasen und normaler Umgebungsluft zuläßt und dabei eine Fettabscheidung bewirkt. In der Figur sind die Strömungsverhältnisse durch Pfeile verdeutlicht. Bei Betrieb des Backofens und bei geschlossener Backofentür 2 baut sich bei Erhitzung im Inneren des Garraumes ein Überdruck auf, der in Form des vorgenannten Wrasens durch den Wrasenableitkanal 9 hindurch entweicht, während durch den Spalt zwischen Backofentür und Muffelflansch Frischluft nachströmt. Der heiße Wrasen und eine bestimmte Menge von Nebenluft 14 aus dem Gehäuseraum bzw. aus der Umgebung des Backofengehäuses 4 wird durch das Kühlgebläse 10 angesaugt, vermischt und dabei vorzugsweise unter den Taupunkt der Raumtemperatur gekühlt, wonach dieses Luftgemisch gegen die Unterseite des großflächigen Fettfilters 13 gedrückt wird, dort gereinigt wird und durch eine frontseitige Ausblasöffnung 15 nach außen abgeführt wird. Die Ausblasöffnung 15 besitzt nach oben geneigte Strömungsleitflächen 16, wodurch die austretende Luftströmung nach oben geleitet wird und beispielsweise nicht die vor dem Backofen stehende Person belästigt. Der Strömungskanal 11 kann sich zumindest annähernd über die gesamte Breite des Backofengehäuses 4 erstrekken, wodurch eine sehr große Fläche des Fettfilters 13 erhalten wird. Der Fettfilter ist so ausgebildet, daß er als solcher oder aber als lösbarer Bestandteil eines nicht weiter dargestellten Tragrahmens frontseitig aus dem Backofengehäuse 4 herausziehbar und auswechselbar ist, ohne daß hierfür Werkzeuge benötigt werden.
