Abstract

Настоящее изобретение относится к бактерии вида Lactobacillus fermentum, имеющей способность ингибировать рост гриба Penicillium solitum, депонированного под № доступа DSM32093, или рост гриба Penicillium brevicompactum, депонированного под № доступа DSM32094, по меньшей мере на 50%. Ингибирующая активность может быть определена в анализе, включающем: (1) приготовление ферментированного молочного продукта посредством: (а) инокулирования молока Lactobacillus fermentum в концентрации по меньшей мере 10КОЕ (колониеобразующая единица)/г и заквасочной культурой, (б) ферментирования до достижения pH 4,6 и (в) отверждения ферментированного молока посредством добавления агара; (2) получение по меньшей мере одного пятна P. solitum или P. brevicompactum на отвержденном агаром ферментированном молоке с концентрацией 500 спор/пятно и его инкубирование в течение 7 суток при 25°C; (3) определение процента ингибирования посредством определения наибольшего диаметра колонии, образованной ростом P. solitum или P. brevicompactum, и выражения указанного диаметра в виде процентной доли наибольшего диаметра, образованного при тех же самых условиях, но в отсутствие штамма Lactobacillus fermentum. Изобретение дополнительно относится к композициям, содержащим указанную бактерию, способам получения ферментированных молочных продуктов с использованием указанной бактерии и к продуктам, полученным таким образом.
