Abstract
Reivindicación 1: Una composición de cultivo iniciador en tina directo que comprende bacterias del ácido láctico que comprende un transportador de manganeso para fermentar un producto alimenticio y para inhibir o retrasar el crecimiento de hongos en dicho producto alimenticio, caracterizada porque la composición comprende hasta 600 ppm de manganeso y la concentración de bacterias del ácido láctico es de al menos 1E + 10 unidades formadoras de colonias/g, en donde, opcionalmente, las bacterias del ácido láctico están libres de superóxido dismutasa, de preferencia libres de superóxido dismutasa de manganeso.
