Abstract

Усовершенствованный способ инактивации микроорганизмов в пищевых продуктах путем введения в пищевой продукт пищевого фенольного соединения и подвергания полученного пищевого продукта, содержащего фенольное соединение, воздействию высокого давления. Данная комбинация физической и химической обработки пищевых продуктов инактивирует нежелательные микроорганизмы в пищевом продукте значительно эффективнее, чем каждая из указанных обработок, причем полученный синергетический антимикробный эффект обработок разного типа превышает любой аддитивный эффект, который можно было бы ожидать при выполнении отдельных обработок.
