Abstract

Un metodo que comprende congelar rapidamente carne por exposicion a una temperatura de congelamiento rapido de no mas que aproximadamente -10 °C por un tiempo suficiente para proporcionar una costra congelada sobre la carne y enfriar la carne con costra congelada resultante por exposicion de la carne con costra congelada a una temperatura de enfriamiento mayor que la temperatura de enfriamiento rapido pero no mas que aproximadamente +10 °C para levantar la temperatura de la superficie de la carne y mantener la superficie a una temperatura no mayor que la temperatura de congelacion de la carne por al menos suficiente tiempo para lesionar letalmente y/o matar bacterias, se usa para reducir la viabilidad de bacterias en la carne. El metodo tiene particular aplicacion en el procesamiento de carne de aves para matar bacterias que comprenden las especies de Campylobacter y/o Salmonella. Una ventaja de la invencion es que la carne es desinfectada de una manera no intrusiva, dejando la carne en un estado natural lo mas posible.
