Περιγράφονται μόρια πυρηνικού οξέος, τα οποία κωδικοποιούν πολυπεπτίδια με την ενζυματική δραστηριότητα μίας φρουκτοζυλοτρανσφεράσης. Περαιτέρω περιγράφονται φορείς, κύτταρα ξενιστή και διαγονιδιακά φυτά, τα οποία περιέχουν τέτοιου είδους μόρια πυρηνικού οξέος. Περαιτέρω περιγράφονται μέθοδοι διεργασιών για την παρασκευή πολυφρουκτόζης, ειδικότερα του τύπου της ινουλίνης, με την χρήση των περιγραφέντων ξενιστών και/ή της φρουκτοζυλοτρανσφεράσης, η οποία έχει παραχθεί από αυτούς.
