Abstract
La presente invencion se refiere a acidos nucleicos que codifican polipeptidos modificados con actividad de fructosiltransferasa, vectores conteniendo ese acido nucleico para la expresion de la fructosiltransferasa modificada en celulas procariontes o eucariontes, celulas huesped conteniendo estos vectores y/o plantas transgenicas, procedimientos para la preparacion de polifructanos de alto peso molecular principalmente con enlaces '-1,2 y un grado de ramificacion muy bajo, particularmente de inulina, procedimientos para la preparacion de fruetooligosacaridos utilizando la inulina preparada inventivamente o usando sacarosa, asi como procedimientos para la preparacion de difructosadianhidridos usando la inulina preparada inventivamente o usando sacarosa, asi como el uso de inulina preparada inventivamente para la preparacion de eteres de inulina y esteres de inulina y el uso de fructooligosacaridos o fructooligosacaridos hidratados y difructosadianhidridos como aditamento alimenticio, particularmente como alimento dietetico.
