Abstract

Die vorliegende Erfindung betrifft Nucleinsäuren, die modifizierte Polypeptide mit Fructosyltransferase-Aktivität codieren, diese Nucleinsäure enthaltende Vektoren zur Expression der modifizierten Fructosyltransferase in pro- oder eukaryontischen Zellen, diese Vektoren enthaltende Wirtszellen und/oder transgene Pflanzen, Verfahren zur Herstellung von hochmolekularen Polyfructanen mit vorweigend βbeta-1, 2-Bindungen und einem sehr niedrigen Verzwendung des erfindungsgemäss hergestellten Inulins oder unter Verwendung von Saccharose, sowie Verfahren zur Herstellung von Difructosedianhydriden unter Verwendung des erfindungsgemäss hergestellten Inulins oder unter Verwendung von Saccharose, sowie die Verwendung des erfindungsgemäss hergestellten Inulins zur Herstellung von INulinethern und INulinestern und die Verwendung von Fructooligosacchariden oder hydrierten Fructooligosacchariden und Difructosedianhydriden als Lebensmittelszusatz, insbesondere als diätisches Lebensmittel.
