Abstract
La presente invención se refiere a un método para la producción continua de harina de maíz nixtamalizado y mas particularmente a uno que obtiene la pre-cocción del grano entero con una solución de cal, y al uso de un enfriamiento adiabático y clasificación bajo un vacío parcial durante la fabricación de harina de maíz nixtamalizado entero para la preparación de tortillas y alimentos a base de maíz de grano entero.
