Abstract

Método para la fabricación de barras individuales de repostería que comprenden un centro en tres dimensiones y al menos una capa de material de repostería a base de azúcar cocida que reviste en parte al menos el centro, caracterizado porque: (i) al menos una banda continua de material de repostería a base de azúcar cocida es calibrada en caliente sobre un rodillo de enfriamiento; (ii) después de un enfriamiento suficiente, la banda es desprendida del rodillo y la banda es depositada sobre una base, destinada a formar el centro de barras y avanzan de manera continua; el depósito se efectúa por contacto de la banda sensiblemente según un plano adyacente a la superficie/línea de contacto la más elevada de la base; la banda es llevada al momento del depósito a un estado viscoplástico tal que la banda es apta a deformarse bajo su propio peso para revestir en parte al menos las caras de la base debajo de la superficie/línea de contacto, (iii) a continuación se cortan tramos de longitud deseada. <EMI FILE="01002341_1" ID="1" IMF=JPEG >
