Abstract
Se describe un producto de patatas fritas de patata / batata no perecedero / estable en almacenamiento empacado en una bolsa / bolsa flexible sellada herméticamente sin la necesidad de una solución ácida circundante. Dicho producto tiene un pH más bajo, preferiblemente por debajo de 4,6, con características mejoradas de perfil de sabor y textura, tales como: (a) 0% -2% de contenido de grasa, (b) una dureza de la capa exterior entre 350 gramos y 2500 gramos después de freír, que permite poca o ninguna necesidad de rebozado de dichos productos, y (c) un contenido de humedad por encima de 55%. Estos beneficios se obtienen típicamente procesando la patata precortada mediante una técnica de procesamiento de un solo paso que puede o no requerir pasos de procesamiento previo. Esta técnica de procesamiento de un solo paso utiliza dióxido de carbono a alta presión junto con un auxiliar o auxiliares de procesamiento que tienen múltiples beneficios, que incluyen simultáneamente (a) reducción del pH del producto, (b) infusión de sabores para mejorar las propiedades organolépticas del producto, y (c) tiempos de ciclo cortos debido al contacto directo con el producto, que se empaca en una bolsa flexible sellada herméticamente para obtener la temperatura interna para lograr la esterilidad comercial dando como resultado un deterioro mínimo en el perfil de textura.
