Abstract

本发明的红茶色素制取方法是用绿茶或新鲜茶叶经化学氧化而直接制成。把绿茶或新鲜茶叶的浸出液在碱性条件下进行氧化,经浓缩得稠膏状红茶色素,再用极性溶剂对其进行提纯,得红茶色素的精制品。本方法的红茶色素提取率可达20%,产品水溶性好,色泽鲜艳,可用作饮料,食品着色剂或用于药物。

Description

本发明是关于红茶色素的制取方法。红茶色素可以用于饮料、食品的着色剂,也可以作为药物使用。
在本发明以前,红茶色素是从红茶中提取的,其提取方法是把红茶浸入水中,把浸出液浓缩、干燥而得。但是用这种方法所得红茶色素的提取率仅在1%左右,而且有霉味。
本发明的目的在于提供一种提取率高、且使所得的红茶色素质量好、色泽鲜艳的制取方法。
根据本发明,提出了一种由绿茶制取红茶色素的方法,用绿茶或新鲜茶叶经化学氧化而直接制成红茶色素。
在绿茶或新鲜茶叶的浸出液中,加入催化剂,该催化剂是在水溶液中能产生OH-离子的化合物,使浸出液呈碱性,用空气、氧气或过氧化氢类似的氧化剂进行氧化,进行加热,使浸出液中的茶多酚与氧结合成红茶色素,溶液由黄绿色逐渐氧化转变成红棕色,边氧化边浓缩,直至稠膏状,取出干燥后,得红茶色素干粗品。
若需精制,在浓缩成稠膏状时,加入极性溶剂和酸,使其溶液呈酸性,然后进行过滤,在所得滤液中加碱,使滤液呈碱性,放置沉淀,再过滤,所得沉淀物经干燥即得红茶色素精制品。
根据本发明的方法制取红茶色素,提取率可达20%左右。产品质量高,水溶性好,色泽鲜艳,且可利用低档绿茶作原料。
本发明的实施例为:把绿茶100克,放入烧杯,加进1200ml水,加热煮沸30分钟,然后过滤,滤渣再加水800ml,加热煮沸20分钟,过滤,合并两次滤液。在滤液中加入浓度为20%NaoH溶液,或者Na2CO3,调节滤液的PH值在7.5~8.5,敞开与空气接触,进行加热煮沸60分钟,用抽真空法或敞开加热浓缩至稠膏状。在稠膏状的红茶色素中,加入95%的乙醇400ml,用1∶1盐酸调节溶液PH值为2,迥流30分钟至溶解,把溶解液过滤,滤液中加入20%的NaoH溶液调节PH值为8~10;放置至完全沉淀,过滤,把沉淀物在80℃~90℃烘干得红茶色素精制品22克。

Claims (10)

1、一种制取红茶色素的方法,其特征在于红茶色素是由绿茶或新鲜茶叶经化学氧化而直接制成。
2、按权利要求1所述的制取红茶色素的方法,其特征在于在绿茶或新鲜茶叶的浸出液中加入能在水溶液中产生OH-离子的化合物,使浸出液呈碱性,进行氧化。
3、按权利要求2所述的制取红茶色素的方法,其特征在于呈碱性的浸出液的PH值最好是在7.5~8.5之间。
4、按权利要求2所述的制取红茶色素的方法,其特征在于催化剂最好为NaOH或Na2CO3
5、按权利要求1、2所述的制取红茶色素的方法,其特征在于氧化剂是空气、氧气或过氧化氢。
6、按权利要求1、2所述的制取红茶色素的方法,其特征在于氧化后的浸出液浓缩成稠膏状。
7、按权利要求6所述的制取红茶色素的方法,其特征在于在稠膏状的红茶色素中加入极性溶剂和酸,使红茶色素溶解,然后,进行过滤;在滤后的溶液中加碱,放置沉淀,并使所得沉淀物干燥。
8、按权利要求7所述的制取红茶色素的方法,其特征在于极性溶剂最好是乙醇。
9、按权利要求7所述的制取红茶色素的方法,其特征在于加酸后溶液PH值最好是2。
10、按权利要求7所述的制取红茶色素的方法,其特征在于加碱后溶液PH值最好是8~10。
