本发明涉及一种咖啡类黑精色素的制备方法,属咖啡技术领域。该制备方法的具体步骤如下:a.云南小粒咖啡生豆在200‑280℃,烘培10‑30min;b.烘培后的咖啡豆研磨成粉末,过100‑200目筛子;c.按照咖啡粉∶水=1∶2‑10(m/v)加入沸纯净水恒温80‑90℃10‑30min溶解,过滤咖啡渣,收集滤液;d.取滤液按照咖啡液∶酒精=3∶7(V/V)醇析12‑24小时,静置沉淀,1000‑3000rpm/min,10‑20min离心过滤。e.利用冷冻干燥机0.4mbar,‑55℃冷冻干燥,最后将干燥产品粉碎得到咖啡类黑精。本发明优点在于:操作简单,制备成本低,产率高,类黑精色素安全;制备的小粒咖啡类黑精色素能够改善食品色泽和风味,并具有抗氧化的作用,能广泛应用于食品领域。

技术领域:
本发明涉及一种咖啡类黑精色素的制备方法,属咖啡技术领域。
背景技术:
云南小粒咖啡,茜草科,咖啡属,植区主要分布在临沧、保山、思茅、西双版纳、德宏等地州。因其独特的品质及优良的性状而享誉中外。云南小粒咖啡以“浓而不苦,香而不烈,略带果味”闻名于世,成为欧美、日本等国际市场的抢手货。可与世界最好的咖啡蓝山咖啡相媲美,曾被国际咖啡组织(ICO)评为一类产品。小粒咖啡粒径≥5.5mm,水分(%)≤12,水浸出物(%)≥22.0,咖啡因(%)≥0.8,总糖(%)≥9.0,蛋白质(%)≥11.5,粗脂肪(%)≥5.5。咖啡豆含有大约100种不同的物质,包括咖啡因、单宁酸、油和氮化合物等,经小粒咖啡制备速溶咖啡中每100克,含咖啡因44-100毫克;每100克调制咖啡中,含咖啡因64-124毫克。具有利尿、刺激中枢神经和呼吸系统、扩大血管、使心跳加速、增强横纹肌的力量以及缓解大脑和肌肉疲劳等功效。
类黑精是美拉德反应后期形成的一类棕褐色的,结构复杂的大分子化合物,在食品中普遍存在。食品类黑精是指碳水化合物(一般指糖类)与带有自由氨基的含氮化合物(如氨基酸、肽、蛋白质等)之间发生美拉德反应的后期形成的一种棕褐色物质。类黑精具有抗菌性,对慢性胃病中的重要致病因子幽门螺杆菌具有抑制作用,此外还具有潜在抗高血压活性,具有抑制ACE活性。有助于减少人体氧化损伤,预防肿瘤、心血管疾病、糖尿病和自身免疫病等多种疾病的发展。类黑精被列入欧盟COST Action919行动中五大协作研究专题而引起世界各国的高度关注。食品中类黑精提取主要应用水浸提、大孔树脂吸附,有机溶剂提取等。目前,我国咖啡行业还没有相对规范和完善的咖啡类黑精制备方法。
发明内容:
本发明的目的在于提供一种操作简单,制备成本低,产率高的小粒咖啡类黑精色素的制备方法。
本发明的小粒咖啡类黑精色素的制备方法,其具体步骤如下:
a.云南小粒咖啡生豆在200-280℃,烘培10-30min;
b.烘培后的咖啡豆研磨成粉末,过100-200目筛子;
c.按照咖啡粉∶水=1∶2-10(m/v)加入沸纯净水恒温80-90℃10-30min溶解,过滤咖啡渣,收集滤液;
d.取滤液按照咖啡液∶酒精=3∶7(V/V)醇析12-24小时,静置沉淀,1000-3000rpm/min,10-20min离心过滤。
e.利用冷冻干燥机0.4mbar,-55℃冷冻干燥,最后将干燥产品粉碎得到咖啡类黑精。
本发明的优点在于:操作简单,制备成本低,产率高,类黑精色素安全;制备的小粒咖啡类黑精色素能改善食品色泽和风味,并具有抗氧化作用,能广泛应用于食品领域。
具体实施方式:
本发明的小粒咖啡类黑精色素的制备方法,其具体步骤如下:
a.云南小粒咖啡生豆在200℃或250℃或280℃,烘培10min或20min或30min;
b.烘培后的咖啡豆研磨成粉末,过100目或150目或200目筛子;
c.按照咖啡粉∶水=1∶2-10(m/v)加入沸纯净,在80℃或85℃或90℃的温度下溶解10min或20min或30min,过滤咖啡渣,收集滤液;
d.取滤液按照咖啡液∶酒精=3∶7(V/V)醇析12小时或18小时或24小时,静置沉淀,在1000rpm/mi或2000rpm/min或2000rpm/min下离心过滤,10min或15min或20min;
e.利用冷冻干燥机0.4mbar,-55℃冷冻干燥,最后将干燥产品粉碎得到咖啡类黑精。

1.一种咖啡类黑精色素的制备方法,其特征在于该制备方法的具体步骤如下:
a.云南小粒咖啡生豆在200-280℃,烘培10-30min;
b.烘培后的咖啡豆研磨成粉末,过100-200目筛子;
c.按照咖啡粉∶水=1∶2-10(m/v)加入沸纯净水恒温80-90℃10-30min溶解,过滤咖啡渣,收集滤液;
d.取滤液按照咖啡液∶酒精=3∶7(V/V)醇析12-24小时,静置沉淀,1000-3000rpm/min,10-20min离心过滤。
e.利用冷冻干燥机0.4mbar,-55℃冷冻干燥,最后将干燥产品粉碎得到咖啡类黑精。
