Abstract
本发明涉及食品制造技术领域,尤其涉及以亚麻籽为原料制备饮料的方法,首先对亚麻籽进行壳皮和果仁分离;将亚麻籽果仁粉碎至10~20目,浸泡后用食用酸调pH值至3~4,搅拌2小时,然后用清水冲洗,用食用碱调pH值至6.5~7;将上述湿的亚麻籽果仁粉碎至250目以下;使上述混合液乳化,形成白色乳状液,对乳状液进行过滤,在滤液中加入木糖醇或甜叶菊,加入占总重量0.1~0.2%的亚麻籽胶,加温至90~105℃消毒,制成饮料。利用本发明的方法制备的饮料,富含不饱和脂肪酸,又含有强抑癌物质本酚素,以及微量元素,维生素E等,对人体发育、糖尿病人,减少胆固醇,降低血脂极有好处。

背景技术
亚麻籽俗称胡麻籽,1500年前中医学家陶宏景在《本草经集注》中即记载“麻籽,味甘平,无毒。主补中益气,久服肥健不老,……久服神仙”;宋元年代,陈直、邹铉所撰<寿视养老新书>中指出:“食治老人中风汗出,四肢顽瘅、言语不利……益老人”。美国食品与药品管理局(FDA)委托美国生命科学研究办公室专家组研究食品中应添加亚麻籽内所含α亚麻酸;英国健康部1995年提出以亚麻籽中α亚麻酸为代表的ω-3脂肪酸应大于日摄入能量的0.2%,1999年美、加拿大、英国、澳大利亚、日本等国专家一致同意并推荐量为日摄入能量的1.0%。由于亚麻籽中所富含的α亚麻酸是人类自身不能合成,必须依靠在人类食物中进行补充,故生物医药中称亚麻籽中这类α亚麻酸为“人类必须脂肪酸”。既然是“人类必须”,而人类又不能自身合成,而只能依靠在人类食品中加入补充,因此用α亚麻酸的主要植物来源的亚麻籽来制备功能性健康食品必须而又极为重要。
亚麻籽中含有极丰富的人类必须脂肪酸α亚麻酸和亚油酸,这类多不饱和脂肪酸不仅可以具有降血脂(降胆固醇),降血压等功能。而且人体摄入后经体内酶的作用可自动转化为鱼油的主要功能成份DHA和EPA;因而又具有鱼油的功能。亚麻籽内所含的木酚素(又称植物雌激素)是其他谷物、豆类的100~800倍,木酚素是极强的抑癌素。亚麻籽中又含有丰富的膳食纤维素,可稳定血糖,刺激胰岛素分泌,因而对糖尿病人是特别有用的功能性健康食品。同时又含有丰富的人体所需的微量元素,如铝、钙、磷、镁、锌、铁等,还有人体所需的维生素如VA、VB1、VB6等,对儿童发育、人类生育、老年人的心脑血管疾病均有功能作用。这是本世纪食品营养界极为推荐的功能性健康食品。亚麻籽所含功效成份详见后附表内。

发明内容
本发明的目的是提出一种以亚麻籽为原料制备饮料的方法,研究以亚麻籽为原料,配以其他的辅料制备功能性健康饮料,对亚麻籽进行综合利用,将对人类生育、健康、防病所必须的脂肪酸以通用饮料的方式进行补充,以达到全民奔小康又健康的目的。
本发明提出的以亚麻籽为原料制备饮料的方法,包括以下各步骤:
1、对亚麻籽进行壳皮和果仁分离;
2、将亚麻籽果仁粉碎至10~20目,浸泡后用食用酸调pH值至3~4,搅拌2小时,然后用清水冲洗,用食用碱调pH值至6.5~7;
3、将上述湿的亚麻籽果仁粉碎至250目以下;
4、使上述混合液乳化,形成白色乳状液,对乳状液进行过滤,在滤液中加入木糖醇或甜叶菊,加入占总重量0.1~0.2%的亚麻籽胶,加温至90~105℃消毒,制成饮料。
利用本发明的方法制备的饮料,富含不饱和脂肪酸(人类必须脂肪酸即α-亚麻酸),又含有强抑癌物质本酚素,以及微量元素,维生素E等,对人体发育、糖尿病人,减少胆固醇,降低血脂极有好处。所制备的饮料为白乳液,可以冷饮也可以热饮。总之,用亚麻籽制备的功能性健康饮料有如下作用:①降低胆固醇降低血脂预防心脑血管疾病;②增强对儿童健康的全面发育;③增强成年人的生育能力;④补充绝经期妇女的雌激素,防止骨质蔬松;⑤具有一定抑癌作用。
具体实施方式
本发明方法中,可以用下列两种方法对亚麻籽全籽或提取亚麻籽胶液后的全籽进行粉碎:
1、符合国标GB/T15681-1995的亚麻籽采用冲击旋碾风动机械系统对亚麻籽进行籽壳和果仁分离。两次分离率可达95%以上,损失率约4%。
2、将符合国标GB/T15681-1995的亚麻籽放入开水中进行浸胶约1.5小时后,用旋转挤压机将胶液和湿籽分离;胶液待用,将此湿的亚麻籽用旋动碾压风动机进行脱壳,并用风动筛分系统将壳皮和果仁分离,分离率约93%,未分离率和碎末约7%留作他用(饲料)。
本发明制备的饮料,可与不同的果汁、菜汁,香料等搭配成不同外观、不同口感的饮料系列。
实施例1
将亚麻籽脱皮,使壳皮和果仁分离,将分离后的亚麻籽果仁粉碎到10目左右,浸泡2小时后用食用柠檬酸调PH=3~4,用清水冲洗二次,后用苏打调PH=6.5~7,再研磨成250目以下的浆状液,滤去残渣,在乳状液中加入糖,0.01%的草香料,加温后成为饮料。
实施例2
将经过浸取提胶后的湿的亚麻籽用旋动碾压机进行脱壳,将脱壳后的果仁,适当粉碎到10目左右,浸泡2小时,用食用柠檬酸调PH=3.5~4,清水冲洗二次,后用苏打调PH=6.5~7,再研磨低于250目的浆状,用50目网再行压滤,滤渣液再用水稀释再进行二次压滤,将两次滤液合并后,进行煮沸消毒,加入0.2%亚麻籽胶后,再加入糖,制成清淡乳型饮料。
Claims (1)
1、一种以亚麻籽为原料制备饮料的方法,其特征在于该方法包括以下各步骤:
(1)对亚麻籽进行壳皮和果仁分离;
(2)将亚麻籽果仁粉碎至10~20目,浸泡后用食用酸调pH值至3~4,搅拌2小时,然后用清水冲洗,用食用碱调pH值至6.5~7;
(3)将上述湿的亚麻籽果仁粉碎至250目以下;
(4)使上述混合液乳化,形成白色乳状液,对乳状液进行过滤,在滤液中加入木糖醇或甜叶菊,加入占总重量0.1~0.2%的亚麻籽胶,加温至90~105℃消毒,制成饮料。
