Abstract
本发明属于食品用香精领域,特别是涉及一种啤酒花香精及其制备方法。本发明的啤酒花香精,由以下成分组成:乙酸、乙酸乙酯、异丁醇、丙酸乙酯、异戊醇、丁酸、丁酸乙酯、异戊酸、乙酸异戊酯、苯甲醛、己酸乙酯、己酸、芳樟醇、苯乙醇、辛酸、辛酸乙酯、4‑乙烯基‑2‑甲氧基苯酚、癸酸、癸酸乙酯、十二酸乙酯、十四酸乙酯;余量为溶剂。本发明制备方法简单、方便,制得的啤酒花香精香气自然浓郁,稳定性好、货架期长、产生成本低。

技术领域
本发明属于食品用香精领域,特别是涉及一种啤酒花香精及其制备方法。
背景技术
啤酒花是多年生攀援草本植物,在我国新疆、四川北部有分布,全国各地多有栽培。啤酒花为酿造啤酒的原料,在啤酒酿造中,啤酒花具有不可替代的作用。
啤酒花就像是啤酒的香料,不同的品种带来不同的芳香和风味,最常见的香调是柑橘类花香:葡萄柚、橙子、柠檬、酸橙,还有松木或松香的味道。
虽然啤酒花常用来制作啤酒,但它在草药中的使用历史也很悠久,现代医学认为,啤酒花可缓解烦躁,具有镇静和促眠的作用,以及具有降低胆固醇、帮助消化问题、抗菌特性和缓解更年期症状的功效。
啤酒花含有酒花精油、酒花树脂、酒花多酚三大成分,不仅能为啤酒带来丰富的风味,在街饮、即饮饮品、冰淇淋等方面也有着不俗的应用。
CN116429991A的发明《一种啤酒感官品评培训用风味标准试剂及其应用》告知:

CN109790495A的发明《啤酒味饮料、啤酒味饮料的制造方法以及向啤酒味饮料赋予良好的浓醇感及余味质感的方法》涉及4-乙烯基-2-甲氧基苯酚。
CN103781896A的发明《通过毕赤酵母与不同的啤酒花品种的组合来提高啤酒风味》告知:啤酒中最重要的风味活性酯是乙酸酯,如乙酸乙酯(“溶剂”样香味)和乙酸异戊酯(“香蕉”香味);以及乙酯,如己酸乙酯和辛酸乙酯(“苹果”香味)。最重要的高级醇是异戊醇(“香蕉”香味)。
发明内容
本发明要解决的技术问题是提供一种啤酒花香精及其制备方法。
为解决上述技术问题,本发明提供一种啤酒花香精,由以下重量百分比的成分组成:
乙酸1%-1.5%、乙酸乙酯2.5%-3.5%、异丁醇0.3%-0.6%、丙酸乙酯0.1%-0.3%、异戊醇6%-7%、丁酸0.6%-1%、丁酸乙酯0.5%-1%、异戊酸0.75%-1.2%、乙酸异戊酯0.2%-0.5%、苯甲醛0.15%-0.3%、己酸乙酯0.4%-0.7%、己酸0.8%-1.3%、芳樟醇0.2%-0.5%、苯乙醇10%-11%、辛酸2%-3%、辛酸乙酯0.5%-1%、4-乙烯基-2-甲氧基苯酚0.1%-0.3%、癸酸0.2%-0.5%、癸酸乙酯1%-2%、十二酸乙酯0.5%-1%、十四酸乙酯0.1%-0.4%;余量为溶剂。
作为本发明的啤酒花香精的改进:所述溶剂为丙二醇或者为丙二醇和乙醇的混合液,所述混合液中,乙醇质量含量≥10%。
作为本发明的啤酒花香精的进一步改进,溶剂由丙二醇:乙醇=3~4:1质量比混合而得。
作为本发明的啤酒花香精的进一步改进,由以下重量百分比的成分组成:
乙酸1.2%、乙酸乙酯3%、异丁醇0.4%、丙酸乙酯0.2%、异戊醇6.5%、丁酸0.8%、丁酸乙酯0.8%、异戊酸1%、乙酸异戊酯0.3%、苯甲醛0.2%、己酸乙酯0.5%、己酸1%、芳樟醇0.3%、苯乙醇10.5%、辛酸2.5%、辛酸乙酯0.8%、4-乙烯基-2-甲氧基苯酚0.2%、癸酸0.3%、癸酸乙酯1.5%、十二酸乙酯0.8%、十四酸乙酯0.2%、余量为溶剂,所述溶剂为丙二醇和乙醇=3:1质量比的混合液。
在本发明中,苯乙醇等提供清甜的花香,异戊醇等提供着啤酒花特有的苦味,乙酸乙酯等提供清灵、微带果香的酒香。采用本发明的方法能获得风味自然、芬芳馥郁、啤酒风味尽显的啤酒花香精。本发明的啤酒花香精可添加于各种酸奶、含乳饮料、果汁饮料、气泡水、果冻、冰淇淋等类型产品,从而获得相应的啤酒花风味系列食品,让消费者体验不喝酒也能享受啤酒花香精带来的类同啤酒的乐趣。
本发明制备方法简单、方便,制得的啤酒花香精香气自然浓郁,稳定性好、货架期长、产生成本低。
具体实施方式
下面结合具体实施例对本发明进行进一步描述,但本发明的保护范围并不仅限于此:
实施例中组合物的制备原料均为市售。
苯乙醇,即,β-苯乙醇。
实施例1、一种啤酒花香精,其原料由以下质量百分比的组分组成:
乙酸1%、乙酸乙酯2.5%、异丁醇0.3%、丙酸乙酯0.1%、异戊醇6%、丁酸0.6%、丁酸乙酯0.5%、异戊酸0.75%、乙酸异戊酯0.2%、苯甲醛0.15%、己酸乙酯0.4%、己酸0.8%、芳樟醇0.2%、苯乙醇10%、辛酸2%、辛酸乙酯0.5%、4-乙烯基-2-甲氧基苯酚0.1%、癸酸0.2%、癸酸乙酯1%、十二酸乙酯0.5%、十四酸乙酯0.1%,余量为溶剂,所述溶剂为丙二醇。
其制备方法为依次进行以下步骤:
a)按上述原料配比进行配料;
b)将配比的原料放入夹层罐中,于密封状态下于10℃-30℃均匀搅拌混合。
实施例2、一种啤酒花香精,其原料由以下质量百分比的组分组成:
乙酸1.2%、乙酸乙酯3%、异丁醇0.4%、丙酸乙酯0.2%、异戊醇6.5%、丁酸0.8%、丁酸乙酯0.8%、异戊酸1%、乙酸异戊酯0.3%、苯甲醛0.2%、己酸乙酯0.5%、己酸1%、芳樟醇0.3%、苯乙醇10.5%、辛酸2.5%、辛酸乙酯0.8%、4-乙烯基-2-甲氧基苯酚0.2%、癸酸0.3%、癸酸乙酯1.5%、十二酸乙酯0.8%、十四酸乙酯0.2%、余量为溶剂,所述溶剂为丙二醇和乙醇按照3:1的质量比混合而得的混合液。
制备方法参照实施例1。
实施例3、一种啤酒花香精,其原料由以下质量百分比的组分组成:
乙酸1.5%、乙酸乙酯3.5%、异丁醇0.6%、丙酸乙酯0.3%、异戊醇7%、丁酸1%、丁酸乙酯1%、异戊酸1.2%、乙酸异戊酯0.5%、苯甲醛0.3%、己酸乙酯0.7%、己酸1.3%、芳樟醇0.5%、苯乙醇11%、辛酸3%、辛酸乙酯1%、4-乙烯基-2-甲氧基苯酚0.3%、癸酸0.5%、癸酸乙酯2%、十二酸乙酯1%、十四酸乙酯0.4%、余量为溶剂,所述溶剂为丙二醇和乙醇按照4:1的质量比混合而得的混合液。
制备方法参照实施例1。
对比例1、一种啤酒花香精,其原料由以下质量百分比的组分组成:
乙酸0.8%、乙酸乙酯2%、异丁醇0.2%、丙酸乙酯0.1%、异戊醇5%、丁酸0.4%、丁酸乙酯0.3%、异戊酸0.5%、乙酸异戊酯0.1%、苯甲醛0.1%、己酸乙酯0.2%、己酸0.4%、芳樟醇0.1%、苯乙醇9%、辛酸1%、辛酸乙酯0.2%、4-乙烯基-2-甲氧基苯酚0.1%、癸酸0.1%、癸酸乙酯0.5%、十二酸乙酯0.2%、十四酸乙酯0.1%,余量为溶剂,所述溶剂为丙二醇。
制备方法参照实施例1。
对比例2、一种啤酒花香精,其原料由以下质量百分比的组分组成:
乙酸1.8%、乙酸乙酯4%、异丁醇0.8%、丙酸乙酯0.5%、异戊醇8%、丁酸1.5%、丁酸乙酯1.2%、异戊酸1.5%、乙酸异戊酯0.8%、苯甲醛0.5%、己酸乙酯0.9%、己酸1.5%、芳樟醇0.8%、苯乙醇12%、辛酸4%、辛酸乙酯1.5%、4-乙烯基-2-甲氧基苯酚0.5%、癸酸0.8%、癸酸乙酯2.4%、十二酸乙酯1.3%、十四酸乙酯0.8%、余量为溶剂,所述溶剂为丙二醇和乙醇按照4:1的质量比混合而得的混合液。
制备方法参照实施例1。
对比例3、取消实施例2中的“芳樟醇”的使用,相应增加溶剂的用量,从而确保成分的质量百分比仍然为100%,其余同实施例2。
对比例4-1、将实施例2中的“十二酸乙酯0.8%、十四酸乙酯0.2%”改成“十二酸乙酯1%”,其余同实施例2。
对比例4-2、将实施例2中的“十二酸乙酯0.8%、十四酸乙酯0.2%”改成“十四酸乙酯1%”,其余同实施例2。
对比例4-3、将实施例2中的“十二酸乙酯0.8%、十四酸乙酯0.2%”改成“十二酸乙酯0.5%、十四酸乙酯0.5%”,其余同实施例2。
对比例5、将实施例2中的“苯乙醇10.5%”改成“苯乙醇8%”,相应增加溶剂的用量,从而确保成分的质量百分比仍然为100%,其余同实施例2。
对比例6、取消实施例2中的“辛酸”的使用,相应增加溶剂的用量,从而确保成分的质量百分比仍然为100%,其余同实施例2。
对比例7、取消实施例2中的“己酸”的使用,相应增加溶剂的用量,从而确保成分的质量百分比仍然为100%,其余同实施例2。
感官评价:
利用评香师进行香气评价,将上述所有的实施例和对比例按照GBT14454.2-2008《香料香气评定方法》,给出评分。
每个啤酒花香精平行制备10份。
选择10名有经验的评香师组成气味评定小组,前期进行模拟评价,显示这些评香师均能区别不同程度啤酒花香气样品间的差别。评香师对所制得啤酒花香精的气味进行评价,评定前注意事项:评定2h之前避免接触刺激味物品、吸烟等,评价过程中避免讨论,每评价完一个样品后,稍作休息后再评价下一个样品。
对评香师提供一种品质佳的天然啤酒花汁(通过市购方式获得)作为对照样品,让评香师根据实例样品的香气与对照样品的香气接近程度进行打分,与对照样品越接近分数越高,有异味、香气尖锐或香气平淡则分数低。即,满分为10分,评价标准为:A:9-10分,香气浓郁、逼真自然,B:6-8分,香气较为浓郁,自然感一般,C:4-5分,香气一般,自然感差,D:0-3分,香气惨淡。
最终选平均值。
所得结果如下表1:

根据感官评价结果,我们得知:在本发明啤酒花香精的配方比例范围内,实施例1-3均有明显的天然啤酒花的香气风味特征,感官评价值均较高。当配方不在本发明设定的范围时,其风味就会失真,感官评价值降低。因此,本发明实施例1-3所得的香精具有风味自然、香味非常接近天然啤酒花汁的优点,其中实施例2的风味最为浓郁自然。
性能测试:
1、稳定性测试:取上述实施例1~3所制得的香精,将其暴露于空气条件下,6h后观察香精颜色是否发生变化;另取一份上述实施例1~3所制得香精,根据标准GB/T 14454.4采用阿贝折光仪进行折光指数测试,折光仪恒温水浴箱温度为25℃。
稳定性测试结果:实施例1~3所得的3个香精稳定性均良好,未发生变色及折光指数的明显改变。
2、留香性测试:取上述案例所制得的香精,将其采用常规方式储存,常温环境(即,25-35℃、不避光条件)下放置3个月,对放置后的香精香气进行评价。所得结果如表2。

留香性测试结果:本发明实施例1~实施例3的各组产品感官评价分数略有下降,但依然有满足产品要求的香气和风味,符合开发要求。
最后,还需要注意的是,以上列举的仅是本发明的若干个具体实施例。显然,本发明不限于以上实施例,还可以有许多变形。本领域的普通技术人员能从本发明公开的内容直接导出或联想到的所有变形,均应认为是本发明的保护范围。
Claims (4)
1.一种啤酒花香精,其特征在于由以下重量百分比的成分组成:
乙酸1%-1.5%、乙酸乙酯2.5%-3.5%、异丁醇0.3%-0.6%、丙酸乙酯0.1%-0.3%、异戊醇6%-7%、丁酸0.6%-1%、丁酸乙酯0.5%-1%、异戊酸0.75%-1.2%、乙酸异戊酯0.2%-0.5%、苯甲醛0.15%-0.3%、己酸乙酯0.4%-0.7%、己酸0.8%-1.3%、芳樟醇0.2%-0.5%、苯乙醇10%-11%、辛酸2%-3%、辛酸乙酯0.5%-1%、4-乙烯基-2-甲氧基苯酚0.1%-0.3%、癸酸0.2%-0.5%、癸酸乙酯1%-2%、十二酸乙酯0.5%-1%、十四酸乙酯0.1%-0.4%;余量为溶剂。
2.根据权利要求1所述的啤酒花香精,其特征在于:所述溶剂为丙二醇或者为丙二醇和乙醇的混合液,所述混合液中,乙醇质量含量≥10%。
3.根据权利要求2所述的啤酒花香精,其特征在于:溶剂由丙二醇:乙醇=3~4:1质量比混合而得。
4.根据权利要求1~3任一所述的啤酒花香精,其特征在于由以下重量百分比的成分组成:
乙酸1.2%、乙酸乙酯3%、异丁醇0.4%、丙酸乙酯0.2%、异戊醇6.5%、丁酸0.8%、丁酸乙酯0.8%、异戊酸1%、乙酸异戊酯0.3%、苯甲醛0.2%、己酸乙酯0.5%、己酸1%、芳樟醇0.3%、苯乙醇10.5%、辛酸2.5%、辛酸乙酯0.8%、4-乙烯基-2-甲氧基苯酚0.2%、癸酸0.3%、癸酸乙酯1.5%、十二酸乙酯0.8%、十四酸乙酯0.2%、余量为溶剂,所述溶剂为丙二醇和乙醇=3:1质量比的混合液。
