背景技术
芒果香精是食品行业目前应用最为广泛、最为量大的一类水果类香精,而发酵芒果香精是芒果味香精一个最为前沿的组成部分,广泛应用于饮料、糖果、焙烤食品、乳制品等领域中。目前,现有的芒果香精生产原料主要是一些人工合成的单体香原料,使用这些香原料生产的芒果香精虽然具有一定的芒果风味,但是与发酵芒果真实香气相对比,具有天然感不够强、香气稳定性不佳等缺点,在产品的应用领域上受到一定的限制。

为解决上述问题,本发明提供了一种口感、香气质量更接近天然风味,能有效增强食品及饮料的天然芒果风味的发酵芒果香精配方及其生产方法。

将乙基麦芽酚、呋喃酮、食用酒精、丙二醇先进行预溶,搅拌至完全溶解后,加入柠檬油、丁酸、己酸、乳酸、辛酸、二甲基硫醚、丁酸乙酯、乙酸叶醇酯、乙酸异戊酯、乙酸己酯、苯甲醇、芳樟醇、乙酸乙酯、2-甲基丁酸乙酯、叶醇、硫代丁酸甲酯、硫代薄荷酮、二苯醚、丙位癸内酯、苯乙醇、丙位庚内酯、丙位辛内酯、己酸叶醇酯、丙位十一内酯、乙酸芳樟酯、二氢茉莉酮酸甲酯、环己基丙酸烯丙酯、苯氧乙酸烯丙酯、己酸烯丙酯,然后加入到35℃正负5℃保温状态下的夹层罐中,搅拌至完全混匀后,取样检验合格后,灌装入库。

其生产方法是:将乙基麦芽酚 0.4KG、呋喃酮 0.0734KG、食用酒精 87.2234KG、丙二醇4.293KG先进行预溶,搅拌至完全溶解后,加入柠檬油 0.1235KG、丁酸 1.5KG、己酸0.07KG、乳酸 5KG、辛酸 0.267KG、二甲基硫醚 0.0057KG、丁酸乙酯 0.104KG、乙酸叶醇酯0.051KG、乙酸异戊酯 0.0097KG、乙酸己酯 0.0096KG、苯甲醇 0.302KG、芳樟醇 0.107KG、乙酸乙酯0.03KG、2-甲基丁酸乙酯 0.033KG、叶醇 0.037KG、硫代丁酸甲酯 0.0014KG、硫代薄荷酮 0.0015KG、二苯醚 0.0227KG、丙位癸内酯 0.096KG、苯乙醇 0.022KG、丙位庚内酯0.016KG、丙位辛内酯 0.0054KG、己酸叶醇酯 0.0057KG、丙位十一内酯 0.007KG、乙酸芳樟酯 0.026KG、二氢茉莉酮酸甲酯 0.036KG、环己基丙酸烯丙酯0.046KG、苯氧乙酸烯丙酯0.035KG、己酸烯丙酯 0.04KG,然后加入到35℃正负5℃保温状态下的夹层罐中,搅拌至完全混匀后,取样检验合格后,灌装入库。
采用上述配方生产的发酵芒果香精的明显优点是:香气和口感更逼真,可以为产品带来更具有天然感的发酵芒果香气及口感,同时使产品的耐热性及稳定性高于国内其他同类产品。

己酸 0.02~0.2
乳酸 1.0~10.0

丁酸乙酯 0.1~1.0
乙酸叶醇酯 0.02~0.2
乙酸异戊酯 0.005~0.02
乙酸己酯 0.005~0.02
苯甲醇 0.1~1.0
芳樟醇 0.1~1.0
乙酸乙酯 0.02~0.2
2-甲基丁酸乙酯 0.02~0.2
叶醇 0.02~0.2
硫代丁酸甲酯 0.001~0.005

3.一种如权利要求1所述的发酵芒果香精配方的生产方法,其特征是包含以下步骤:将乙基麦芽酚、呋喃酮、食用酒精、丙二醇先进行预溶,搅拌至完全溶解后,加入柠檬油、丁酸、己酸、乳酸、辛酸、二甲基硫醚、丁酸乙酯、乙酸叶醇酯、乙酸异戊酯、乙酸己酯、苯甲醇、芳樟醇、乙酸乙酯、2-甲基丁酸乙酯、叶醇、硫代丁酸甲酯、硫代薄荷酮、二苯醚、丙位癸内酯、苯乙醇、丙位庚内酯、丙位辛内酯、己酸叶醇酯、丙位十一内酯、乙酸芳樟酯、二氢茉莉酮酸甲酯、环己基丙酸烯丙酯、苯氧乙酸烯丙酯、己酸烯丙酯,然后加入到35℃正负5℃保温状态下的夹层罐中,搅拌至完全混匀后,取样检验合格后,灌装入库。
