Abstract
本发明公开了一种复合型双蛋白组合物及其制备方法,该组合物包括以下重量份组分:大豆分离蛋白20‑30份、乳清蛋白50‑80份、党参提取物16‑20份、山楂提取物10‑30份、维生素预混料2‑6份、调味剂30‑40份和燕麦纤维5‑6份。本发明还包括上述复合型双蛋白组合物的制备方法。本发明的复合型双蛋白组合物采用动物蛋白和植物蛋白搭配的方式,并加入了增强蛋白功效的党参提取物和山楂提取物,能够起到缓解疲劳抗衰老和提高人体免疫力的作用,且降低血浆胆固醇以及减少骨质疏松等病症的发生,促进双蛋白营养品的推广和应用。

技术领域
本发明涉及食品制备技术领域,具体涉及一种复合型双蛋白组合物及其制备方法。
背景技术
随着人们生活水平的提高,保健、美容的意识大大增强,人们开始关注没有污染的食品。
蛋白质是一切生命的物质基础,为机体细胞的重要组成部分,是人体组织更新和修补的主要原料,与生命及各种形式的生命活动紧密联系在一起的物质。人体的生长、发育、运动、遗传、繁殖等一切生命活动都离不开蛋白质。蛋白质作为人体不可缺少的营养成分约占人体组织的20%,每天约有3%的蛋白质参与新陈代谢完成人体的各种生理活动。如果蛋白质长时间地摄入不足,正常代谢和生长发育便会无法进行,轻者发生疾病,重者甚至可以导致死亡。因此保证优质蛋白质的补给是关系到身体健康的重要问题,只有不断的摄取优质的蛋白质,才能维持细胞的正常功能及其新陈代谢。
蛋白质的来源有两大类:一类是动物性蛋白质,另一类是植物性蛋白质。人体摄取蛋白质类营养,不仅在于数量,其种类、质量也是非常重要的,即蛋白质的构成及营养价值如何十分重要。蛋白质的营养价值主要取决于消化度和该种蛋白质所含氨基酸的种类及组合。
但现有的蛋白质食品中缺少能够为人体提供足够营养的搭配,搭配不合理,不利于人体的吸收,无法满足人体需求。且不能起到预防某类疾病以及提高人体免疫力的作用,限制了蛋白质食品的发展和应用。
发明内容
为了解决上述技术问题,本发明的目的是提供一种复合型双蛋白组合物及其制备方法,该组合物采用动物蛋白和植物蛋白搭配的方式,并加入了增强蛋白功效的党参提取物和山楂提取物,能够起到缓解疲劳抗衰老和提高人体免疫力的作用,且降低血浆胆固醇以及减少骨质疏松等病症的发生,促进双蛋白营养品的推广和应用。
本发明解决上述技术问题的技术方案如下:提供一种复合型双蛋白组合物,包括以下重量份组分:大豆分离蛋白20-30份、乳清蛋白50-80份、党参提取物16-20份、山楂提取物10-30份、维生素预混料2-6份、异麦芽酮糖醇10-20份、调味剂30-40份和燕麦纤维5-6份。
进一步,复合型双蛋白组合物,包括以下重量份组分:大豆分离蛋白25份、乳清蛋白60份、党参提取物18份、山楂提取物20份、维生素预混料4份、异麦芽酮糖醇15份、调味剂35份和燕麦纤维6份。
进一步,党参提取物通过以下方法制备得到:将党参切碎后加入党参10-15倍重量的水煎煮2-4次,每次0.5-1.5h,合并煎煮液,浓缩,然后通过大孔吸附树脂先后采用水和50-70vt%乙醇洗脱,浓缩,干燥,得党参提取物。
进一步,山楂提取物通过以下方法制备得到:将山楂加入60-70wt%浓度的乙醇中加热回流提取2-4次,每次1-2h,合并滤液,减压浓缩,过滤后将滤液加入5-6mol/L等量盐酸溶液中,在70-90℃温度下水解20-40min,冷却后过滤,最后依次经洗涤和过滤,得山楂提取物。
进一步,山楂和乙醇的质量比为1:8-10;减压浓缩至相对密度为1-1.1。
进一步,维生素预混料为维生素B、维生素C和维生素D中的至少一种。
进一步,维生素B为维生素B1、维生素B2、维生素B6和维生素B12中的至少一种。
进一步,调味剂为木糖醇、结晶果糖和异麦芽酮糖中的至少一种。
上述复合型双蛋白组合物的制备方法,包括以下步骤:
将维生素预混料、异麦芽酮糖醇、调味剂和燕麦纤维分别过70-80目筛后混匀,然后加入党参提取物和山楂提取物混匀,再加入大豆分离蛋白和乳清蛋白混匀,分装,得复合型双蛋白组合物。
上述复合型双蛋白组合物在制备双蛋白营养品中的应用。
一种蛋白保健食品,包括上述复合型双蛋白组合物。
本发明具有以下有益效果:
1、本发明的组合物采用动物蛋白和植物蛋白搭配的方式,并加入了增强蛋白功效的党参提取物和山楂提取物,能够起到抗衰老和提高人体免疫力的作用,且降低血浆胆固醇以及减少骨质疏松等病症的发生;该组合物搭配合理,有利于人体吸收,能够满足人体需求,促进蛋白保健食品的推广和应用,有效解决了现有技术中缺少相应蛋白保健食品搭配、无法满足疾病防治等问题。
2、大豆蛋白有助于降低血浆胆固醇水平,食用大豆蛋白就能降低血液中低密度脂蛋白胆固醇、总胆固醇和甘油三酯,而不会降低高密度脂蛋白胆固醇。由于高血浆胆固醇是导致心脏病、动脉粥样硬化的主要因素,因而大豆蛋白对防治心血管疾病,保证心脏健康有重要作用。且在组合物中还加入了山楂提取物,山楂味酸、甘,性微温,入脾、胃经,具有消食化积、活血化瘀、散瘀行滞之功,能消一切饮食积滞,尤善消肉食油腻之积。山楂提取物能扩张冠状动脉,增加冠脉流量,保护心肌缺血缺氧,并可强心、降血压及抗心律失常,又能降血脂,抗动脉粥样硬化。现代药理研究证明,山楂所含脂肪酸能促进脂肪消化,并增加胃消化酶的分泌而促进消化,且对胃肠功能有一定调整作用。其具有降血脂的功效,用于治疗高血脂症;也可用于冠心病、高血脂症及动脉粥样硬化引起的其他心脑血管疾病及高血压的辅助治疗。同时,山楂提取物能够促进大豆蛋白的降胆固醇作用,一同用于防治心血管疾病。
与此同时,大豆蛋白能阻止尿钙损失,有助促进骨质健康。大豆的含硫氨基酸含量偏低,是所有高蛋白食品中引起尿钙损失最少的。动物实验证明,食用大豆蛋白能阻止骨质丢失,从而减少患骨质疏松的危险。而党参能够促进钙的吸收,补充的骨量流失,增强骨质,改善骨质疏松;党参能够进一步增强大豆蛋白改善骨质疏松的作用,起到更佳的效果。
3、而乳清蛋白具有抗衰老、提高免疫力、增强体质和解毒之功效。用于预防和配合治疗糖尿病、慢性肠炎、胃炎、冠心病、高血脂、疲劳综合症;并可迅速收复创伤、消除老年斑和修复疤痕,有显著的延缓衰老、改善睡眠、美容驻颜等效果。且乳清蛋白提供机体支链氨基酸,能补充和修复重建瘦体组织,缓解肌肉组织的疲劳。同时,党参中含有天然药物成分,其提取物可以提高人体血液中的超氧化物体化酶的活性,平时适当的服用可以增强清除自由基的能力,可以起到延缓衰老的效果。党参提取物的使用促进了乳清蛋白的缓解疲劳和抗衰老以及提高免疫力的作用,能够更好的保护人体,避免疾病的发生。
4、大豆蛋白具有降低血浆胆固醇水平,防治心血管疾病,以及阻止尿钙损失,缓解骨质疏松的作用;而乳清蛋白具有抗衰老、提高免疫力等功效。而党参的加入可以促进钙的吸收,增强大豆蛋白改善骨质疏松的作用;党参还能促进乳清蛋白抗衰老以及提高免疫力的作用。山楂提取物则能够促进大豆蛋白的降胆固醇作用,一同用于防治心血管疾病。
5、添加异麦芽酮糖醇来增加蛋白粉的营养价值,达到快速全面补充营养、缓解疲劳的效果。维生素预混料为组合物提供所需的各种维生素,提高组合物的营养价值,且维生素B还可以促进蛋白质的消化吸收。调味剂则用于增加组合物调味,改善口感。

实施例1
一种复合型双蛋白组合物,包括以下重量份组分:大豆分离蛋白20份、乳清蛋白50份、党参提取物16份、山楂提取物10份、维生素预混料(维生素C)2份、异麦芽酮糖醇10份、木糖醇30份和燕麦纤维5份。
其中,党参提取物通过以下方法制备得到:将党参切碎后加入党参10倍重量的水煎煮2次,每次0.5h,合并煎煮液,浓缩,然后通过大孔吸附树脂先后采用水和50vt%乙醇洗脱,浓缩,干燥,得党参提取物。
山楂提取物通过以下方法制备得到:将山楂按质量比为1:8加入60wt%浓度的乙醇中加热回流提取2次,每次1h,合并滤液,减压浓缩至相对密度为1,过滤后将滤液加入5mol/L等量盐酸溶液中,在70℃温度下水解20min,冷却后过滤,最后依次经洗涤和过滤,得山楂提取物。
上述复合型双蛋白组合物的制备方法,包括以下步骤:
将维生素预混料、异麦芽酮糖醇、木糖醇和燕麦纤维分别过80目筛后混匀,然后加入党参提取物和山楂提取物混匀,再加入大豆分离蛋白和乳清蛋白混匀,分装,得复合型双蛋白组合物。
实施例2
一种复合型双蛋白组合物,包括以下重量份组分:大豆分离蛋白25份、乳清蛋白60份、党参提取物18份、山楂提取物20份、维生素预混料(维生素B6、维生素D)4份、异麦芽酮糖醇15份、结晶果糖35份和燕麦纤维6份。
其中,党参提取物通过以下方法制备得到:将党参切碎后加入党参12倍重量的水煎煮3次,每次1h,合并煎煮液,浓缩,然后通过大孔吸附树脂先后采用水和60vt%乙醇洗脱,浓缩,干燥,得党参提取物。
山楂提取物通过以下方法制备得到:将山楂按质量比为1:9加入60wt%浓度的乙醇中加热回流提取3次,每次1h,合并滤液,减压浓缩至相对密度为1,过滤后将滤液加入5mol/L等量盐酸溶液中,在80℃温度下水解30min,冷却后过滤,最后依次经洗涤和过滤,得山楂提取物。
上述复合型双蛋白组合物的制备方法,包括以下步骤:
将维生素预混料、异麦芽酮糖醇、结晶果糖和燕麦纤维分别过80目筛后混匀,然后加入党参提取物和山楂提取物混匀,再加入大豆分离蛋白和乳清蛋白混匀,分装,得复合型双蛋白组合物。
实施例3
一种复合型双蛋白组合物,包括以下重量份组分:大豆分离蛋白30份、乳清蛋白80份、党参提取物20份、山楂提取物30份、维生素预混料6份、异麦芽酮糖醇20份、调味剂40份和燕麦纤维6份。
其中,党参提取物通过以下方法制备得到:将党参切碎后加入党参15倍重量的水煎煮4次,每次1.5h,合并煎煮液,浓缩,然后通过大孔吸附树脂先后采用水和70vt%乙醇洗脱,浓缩,干燥,得党参提取物。
山楂提取物通过以下方法制备得到:将山楂按质量比为1:10加入70wt%浓度的乙醇中加热回流提取4次,每次2h,合并滤液,减压浓缩至相对密度为1.1,过滤后将滤液加入6mol/L等量盐酸溶液中,在90℃温度下水解40min,冷却后过滤,最后依次经洗涤和过滤,得山楂提取物。
上述复合型双蛋白组合物的制备方法,包括以下步骤:
将维生素预混料、异麦芽酮糖醇、调味剂和燕麦纤维分别过80目筛后混匀,然后加入党参提取物和山楂提取物混匀,再加入大豆分离蛋白和乳清蛋白混匀,分装,得复合型双蛋白组合物。

对比例1和实施例2的区别在于,不含有党参提取物。

对比例2和实施例2的区别在于,不含有山楂提取物。
实验例小鼠负重游泳实验
采用实施例1-3所得复合型双蛋白组合物以及对比例1-2所得组合物对健康小鼠进行负重游泳实验,将60只体重在18-22g的雌雄各半的小鼠按体重随机分成6组,每组10只,分别对应实施例1-3所得复合型双蛋白组合物、对比例1-2所得组合物以及对照组(等体积的双蒸水),每日灌胃一次,使用30g组合物,每次给40mL/kg,连续灌胃30d,最后一次灌胃30min后将小鼠放置于30℃水中不负重游泳到将要沉落,休息60min后,摘取小鼠的眼球取血,静置0.5h后,1500r/min离心15min,取血清放置于-80℃保存待测。另外脱臼处死小鼠,取肝脏,预冷磷酸缓冲液洗净残血,滤纸吸干水分后-80℃保存待测,分别对乳酸脱氢酶活力(LDH)、血清尿素氮含量(BUN)、肝糖原含量和乳酸(LD)含量进行测定,其结果见表1。

由表1可知,本发明的复合型双蛋白组合物均能不同程度的提高小鼠乳酸脱氢酶活力(LDH)和小鼠的肝糖原水平,降低血清尿素氮含量(BUN)和乳酸(LD)含量。上述结果表明,灌胃本发明复合型双蛋白组合物的小鼠运动后的乳酸脱氢酶水平显著高于对照组和对比例1-2,表明该乳清蛋白粉能够有效提高昆明小鼠的乳酸脱氢酶活性,加速乳酸的清除,提高小鼠的抗疲劳性能。

1.一种复合型双蛋白组合物,其特征在于,包括以下重量份组分:大豆分离蛋白20-30份、乳清蛋白50-80份、党参提取物16-20份、山楂提取物10-30份、维生素预混料2-6份、异麦芽酮糖醇10-20份、调味剂30-40份和燕麦纤维5-6份。

4.如权利要求1或2所述的复合型双蛋白组合物,其特征在于,所述山楂提取物通过以下方法制备得到:将山楂加入60-70wt%浓度的乙醇中加热回流提取2-4次,每次1-2h,合并滤液,减压浓缩,过滤后将滤液加入5-6mol/L等量盐酸溶液中,在70-90℃温度下水解20-40min,冷却后过滤,最后依次经洗涤和过滤,得山楂提取物。
5.如权利要求4所述的复合型双蛋白组合物,其特征在于,山楂和乙醇的质量比为1:8-10;减压浓缩至相对密度为1-1.1。
6.如权利要求1或2所述的复合型双蛋白组合物,其特征在于,所述维生素预混料为维生素B、维生素C和维生素D中的至少一种。
7.如权利要求1或2所述的复合型双蛋白组合物,其特征在于,所述调味剂为木糖醇、结晶果糖和异麦芽酮糖中的至少一种。
8.权利要求1-7任一项所述的复合型双蛋白组合物的制备方法,其特征在于,包括以下步骤:
将维生素预混料、异麦芽酮糖醇、调味剂和燕麦纤维分别过70-80目筛后混匀,然后加入党参提取物和山楂提取物混匀,再加入大豆分离蛋白和乳清蛋白混匀,分装,得复合型双蛋白组合物。
9.权利要求1-7任一项所述的复合型双蛋白组合物在制备双蛋白营养品中的应用。
10.一种双蛋白营养品,其特征在于,包括权利要求1-7任一项所述的复合型双蛋白组合物。
