本发明公开一种酵素饮料及其制备方法,其中,酵素饮料包括酵素原液、复合益生菌、复合糖醇类物质、鱼皮胶原蛋白肽以及维生素C,所述复合益生菌包括酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌的至少两种,所述复合糖醇类物质包括麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L‑阿拉伯糖的至少三种,所述酵素原液由多种水果的浸渍液接种所述复合益生菌后,在密闭容器中发酵而得。本发明酵素饮料具有营养丰富、口感好、润肠通便、解酒、降尿酸和改善肌肤的功效。

技术领域
本发明涉及饮料技术领域,特别涉及一种酵素饮料及其制备方法。
背景技术
酵素也被称为生物催化酶。关于酵素的研究最早于20世纪初起源于日本,商家把水果、蔬菜等经发酵得到的产品也称为酵素,也即目前市场上普遍宣传和销售的发酵产品。中国生物发酵产业协会发布的《酵素产品分类导则》标准中,将酵素定义为以动物、植物和食用菌等为原料,经微生物发酵制得的含有特定生物活性成分的可食用的酵素产品。目前,市面上的酵素产品多为香精、食品添加剂调配型饮料,不但口感不好,且营养价值低、功效比较少。

发明内容
本发明的主要目的是提出一种酵素饮料,旨在解决提高酵素产品的润肠通便效果。
为实现上述目的,第一方面,本发明提出一种酵素饮料,包含:
酵素原液,10~200份;
复合益生菌,1~20份,所述复合益生菌包括酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌的至少两种;
复合糖醇类物质,3~40份,所述复合糖醇类物质包括麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖的至少三种;
鱼皮胶原蛋白肽,1~20份;以及
维生素C,1~20份;
其中,所述酵素原液由多种水果的浸渍液接种所述复合益生菌后,在密闭容器中发酵而得,多种所述水果包括菠萝、木瓜、苹果、香蕉、猕猴桃、桔子、葡萄、柠檬、火龙果,哈密瓜和荔枝的至少五种。
可选地,所述酵母菌为1.5~3份,所述醋酸杆菌为2~2.5份,所述发酵乳杆菌为1.4~2.5份,所述植物乳杆菌为2~3份,所述短双歧杆菌为1.5~3份,所述嗜酸乳杆菌为1.2~2份。
可选地,所述麦芽糖醇为2~20份,所述木糖醇为1~10份,所述乳糖醇为 2~20份,所述聚葡萄糖为5~15份,所述L-阿拉伯糖为1~10份。
可选地,所述菠萝为0.5~1.0份,所述木瓜为0.2~1.0份,所述苹果为0.8~1.8份,所述香蕉为0.3~1.2份,所述猕猴桃为0.5~1.0份,所述桔子为0.4~1.2份,所述葡萄为0.8~1.5份,所述柠檬为0.1~1.0份,所述火龙果为0.3~1.2份,所述哈密瓜为0.3~1.1份,所述荔枝为0.5~1.0份。
第二方面,本发明还提出一种酵素饮料制备方法,包括如下步骤:
(1)取菠萝0.5~1.0份、木瓜0.2~1.0份、苹果0.8~1.8份、香蕉0.3~1.2份、猕猴桃0.5~1.0份、桔子0.4~1.2份、葡萄0.8~1.5份、柠檬0.1~1.0份、火龙果0.3~1.2 份、哈密瓜0.3~1.1份、荔枝0.5~1.0份,以上水果的至少五种,将一系列水果切丁置于密封发酵罐中,加入水500-800份和麦芽糖醇2~20份,混合均匀,形成浸渍液;
(2)取醋酸杆菌2~2.5份、发酵乳杆菌1.4~2.5份、植物乳杆菌2~3份、短双歧杆菌1.5~3份、嗜酸乳杆菌1.2~2份,以上菌种的至少两种组成复合益生菌,向所述浸渍液接种所述混合益生菌,所述混合益生菌与所述浸渍液的质量比为大于或等于7%,且小于或等于10%,30℃~35℃密闭厌氧恒温静置发酵2~4 个月,发酵过程中不时搅拌,待pH值达到4.2时,停止发酵;随后添加酵母菌 1.5~3份,在25~30℃的温度下发酵,待pH值达到3.6时,终止发酵;
(3)发酵完成后静置48h后,在3,500~4,500rpm下离心20~25分钟,过滤、灭菌,得到酵素原液;
(4)向10~200份的所述酵素原液中加入1~20份的复合益生菌、3~40份的复合糖醇类物质、1~20份的鱼皮胶原蛋白肽及1~20份的维生素C,混合均匀;所述复合糖醇类物质包括2~20份麦芽糖醇、1~10份木糖醇、2~20份乳糖醇、 5~15份聚葡萄糖、1~10份L-阿拉伯糖的至少三种糖/醇。
本发明有益效果:
本发明酵素饮料具有多种功效。首先,本发明酵素饮料营养丰富,所述酵素饮料的酵素原液由多种水果发酵而成,富含多种水果的天然成分,营养丰富,通过多种复合益生菌对多种水果的多段式混合发酵,水果富含的营养成分被分解成更容易被人体吸收的小分子,使得酵素原液富含有机酸、益生元、氨基酸、次级代谢产物等活性物质。
其次,本发明酵素饮料口感好,所述酵素饮料选取添加了多种复合糖醇类物质,综合了多种复合糖醇类物质的味道,口感丰富。
本发明酵素饮料还具有润肠通便的效果,所述酵素饮料包含的复合益生菌可以改善人体肠道菌群,维持人体肠道菌群的平衡;复合糖醇类物质可以直接到达大肠,被所述复合益生菌利用,在肠道发酵产生短链脂肪酸(SCFA),使肠道自发性蠕动增加,刺激排便。同时,膳食纤维可以促进肠道蠕动,缩短肠内物质通过肠道的时间,使排便通畅;并且,进入大肠内的纤维还能被肠内细菌部分地、选择性地分解与发酵,可以降低肠道内环境的pH,改变消化系统中的菌群,刺激肠道粘膜加快粪便的排泄。
因为本发明酵素饮料具有润肠通便的功效,从而可以提高新陈代谢,促进乙醇的分解。所述酵素饮料通过提高肝脏内相关酶的活性,加速乙醇在肝脏内的氧化代谢,消除酒后体内产生的过量自由基,阻止过氧化脂质的形成,从而减轻乙醇对肝组织的损伤,避免酒精中毒导致的各种代谢异常及诱发的各种疾病。
本发明酵素饮料富含维生素、氨基酸、有机酸、低聚糖、黄酮类和多酚类物质,通过抑制XOD和ADA的酶活性,来减少体内尿酸的形成。
本发明酵素饮料还可以通过加速体内毒素的分解,改善肌肤。而且,本发明酵素饮料包含来自深海优质的鱼皮胶原蛋白肽,鱼皮胶原蛋白肽可以被人体快速吸收,提高皮肤胶原蛋白的含量,有助于改善肌肤;维生素C也可以促进胶原蛋白的合成、改善皮肤光泽、去斑、抗皱等。
这样,本发明酵素饮料具有营养丰富、口感好、润肠通便、解酒、降尿酸和改善肌肤的功效。本发明酵素饮料制备方法可以制备出上述酵素饮料,至少部分具有所述酵素饮料所带来的所有有益效果。

本发明提出一种酵素饮料。
本发明提出的酵素饮料包含10~200份的酵素原液、1~20份的复合益生菌、 3~40份的复合糖醇类物质、1~20份的鱼皮胶原蛋白肽以及1~20份的维生素C;所述复合益生菌包括酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌的至少两种;所述复合糖醇类物质包括麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖的至少三种;其中,所述酵素原液由多种水果的浸渍液接种所述复合益生菌后,在密闭容器中发酵而得,多种所述水果包括菠萝、木瓜、苹果、香蕉、猕猴桃、桔子、葡萄、柠檬、火龙果,哈密瓜和荔枝的至少五种。
在本发明酵素饮料中,所述份可以为重量份,也可以为体积比或者浓度比。所述酵素原液由菠萝、木瓜、苹果、香蕉、猕猴桃、桔子、葡萄、柠檬、火龙果、哈密瓜和荔枝的水果发酵而来,具有丰富的营养价值和药用价值。
菠萝:具有消食止泻、补脾胃、固元气、益气血、消食、祛湿、养颜瘦身等功效。木瓜:含有胡萝卜素和丰富的维生素C,帮助机体修复组织,消除有毒物质,增强人体免疫力,帮助机体抵抗病毒的侵袭。苹果:含有较多的钾,能与人体过剩的钠盐结合,使之排出体外;含有磷和铁等元素,易被肠壁吸收,具有补脑养血、宁神安眠作用。香蕉:营养价值高,可以增强人体对疾病的抵抗力;含有的硫胺素能抗脚气病,具有促进食欲、助消化,保护神经系统的功效;含有的核黄素能促进人体的正常生长和发育;含有的镁元素可让肌肉松弛。猕猴桃:含有丰富的矿物质,包括丰富的钙、磷、铁,含有胡萝卜素和多种维生素,对保持人体健康具有重要的作用;可以治疗坏血病,具有抗糖尿病的潜力;可以有效治疗呼吸问题,改善视力等。桔子:富含维生素C与柠檬酸,具有美容和消除疲劳的作用;具有降低胆固醇、预防心脑血管病、抗癌、健胃健脾、止痛、预防肿痛、治疗乳痛等作用。

所述复合益生菌包括酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌。具体的,酵母菌:兼性厌氧菌,在有氧的情况下生长较快,可以把糖分解成二氧化碳和水,在缺氧的情况下,把糖分解成酒精和二氧化碳。醋酸杆菌:可用六碳糖和甘油作为碳源,可氧化酒精或者葡萄糖。发酵乳杆菌:革三阳性兼性厌氧或专性厌氧杆菌,能发酵多种糖,有很高的耐酸力,发酵后产生乳酸和较大量的乙酸、乙醇和CO2。
植物乳杆菌:厌氧或兼性厌氧,作为人体胃肠道的益生菌群,具有维持肠道内菌群平衡、提高机体免疫力和促进营养物质吸收等多种功能。短双歧杆菌:革兰氏阳性杆菌,可以改善肠道环境、抑制肠道有害细菌的生长、提高肌体免疫力,对预防便秘、防疾病、抗衰老等具有诸多好处。嗜酸乳杆菌:属于革兰氏阳性杆菌,主要存在小肠中,释放乳酸,乙酸和一些对有害菌起作用的抗菌素,可以调整肠道菌群平衡,抑制肠道不良微生物的增殖。
所述复合糖醇类物质包括麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖,具有多种保健功能。具体的,麦芽糖醇:具有抗龋齿、促进钙的吸收,不刺激胰岛素的分泌,抑制体内脂肪过多积聚,难消化,热量低等功能。木糖醇:可作为糖尿病人的甜味剂、营养补充剂和辅助治疗剂,也具有改善肝功能、防龋齿、减肥、热量低、稳定胰岛素和激素等多种功效。乳糖醇:性质比乳糖稳定,具有低热量、防龋齿、稳定血糖、抑制蔗糖吸收等多种功效,可作为糖尿病人的甜味剂。聚葡萄糖:水溶性膳食纤维,具有明显增加粪便体积、增强通便、降低肠道癌发生风险、结合清除体内的胆酸、降低血清胆固醇、热量低、调整肠胃功能、促进营养物质的吸收、调节肠道菌群平衡、降低血糖反应,促进矿物元素的吸收等多种功效。L-阿拉伯糖:可以有选择性地影响小肠二糖水解酶中消化蔗糖的蔗糖酶,从而抑制蔗糖的吸收,可以抑制胰岛素的分泌,调节血糖,抑制肥胖、预防并治疗与高血糖相关的疾病,在减肥、控制糖尿病等方面具有巨大的应用前景。
乳酸杆菌和双歧杆菌等肠道有益菌群的生长增殖需要较高的营养水平,而大肠杆菌等条件致病菌对于营养的要求相对较低。上述复合糖醇类物质属于功能性低聚糖,可以给有益菌群(例如双歧杆菌、乳酸杆菌)提供营养,从而抑制有害菌群的增殖,维持肠道进群的平衡,促进肠道菌群的健康。
所述鱼皮胶原蛋白肽属于高分子功能性蛋白质,属于不溶性纤维型蛋白质。因为胶原蛋白是皮肤的主要组成部分,占皮肤真皮层80%的比重,所述鱼皮胶原蛋白肽可以在皮肤中构成了一张细密的弹力网,牢固锁住水分支撑着皮肤,从而改善皮肤的状态,使得皮肤充满弹性和水分。所述鱼皮胶原蛋白肽可以选自美国阿拉斯加和俄罗斯鄂霍茨克海海域的优质野生鳕鱼,通过定向酶切技术生产,分子量只有600~1000kD,吸收效果好,且性质稳定。
维生素C又叫抗坏血酸,能够保护血管的通透性和弹性,促进血色素铁的吸收,清除体内的自由基,具有抗氧化、防癌、提高免疫力的效果;还可以促进胶原蛋白的合成,具有改善皮肤光泽、去斑、抗皱等功效。
本发明酵素饮料具有多种功效。首先,本发明酵素饮料营养丰富,所述酵素饮料的酵素原液由多种水果发酵而成,富含多种水果的天然成分,营养丰富,通过多种复合益生菌对多种水果的多段式混合发酵,水果富含的营养成分被分解成更容易被人体吸收的小分子,使得酵素原液富含有机酸,益生元,氨基酸,次级代谢产物等活性物质。其次,本发明酵素饮料口感好,所述酵素饮料选取添加了多种复合糖醇类物质,综合了多种复合糖醇类物质的味道,口感丰富。
本发明酵素饮料还具有润肠通便的效果,所述酵素饮料包含的复合益生菌可以改善人体肠道菌群,维持人体肠道菌群的平衡;功能性低聚复合糖醇类物质可以直接到达大肠,被所述复合益生菌利用,在肠道发酵产生短链脂肪酸(SCFA),使肠道自发性蠕动增加,刺激排便;同时,膳食纤维可以促进肠道蠕动,缩短肠内物质通过肠道的时间,使排便通畅;并且,进入大肠内的纤维还能被肠内细菌部分地、选择性地分解与发酵,可以降低肠道内环境的pH,改变消化系统中的菌群,刺激肠道粘膜加快粪便的排泄。因为本发明酵素饮料具有润肠通便的功效,从而可以提高新陈代谢,促进乙醇的分解。
所述酵素饮料通过提高肝脏内相关酶的活性,加速乙醇在肝脏内的氧化代谢,消除酒后体内产生的过量自由基,阻止过氧化脂质的形成,从而减轻乙醇对肝组织的损伤,避免酒精中毒导致的各种代谢异常及诱发的各种疾病。本发明酵素饮料富含维生素、氨基酸、有机酸、低聚糖、黄酮类和多酚类物质,通过抑制XOD和ADA的酶活性,来减少体内尿酸的形成。本发明酵素饮料还可以通过加速体内毒素的分解,改善肌肤。
而且,本发明酵素饮料包含来自深海优质的鱼皮胶原蛋白肽,鱼皮胶原蛋白肽可以被人体快速吸收,提高皮肤胶原蛋白的含量,有助于改善肌肤;维生素C也可以促进胶原蛋白的合成、改善皮肤光泽、去斑、抗皱等。这样,本发明酵素饮料具有营养丰富、口感好、润肠通便、解酒、降尿酸和改善肌肤的功效。
可选地,所述酵母菌为1.5~3份,所述醋酸杆菌为2~2.5份,所述发酵乳杆菌为1.4~2.5份,所述植物乳杆菌为2~3份,所述短双歧杆菌为1.5~3份,所述嗜酸乳杆菌为1.2~2份。
可选地,所述麦芽糖醇为2~20份,所述木糖醇为1~10份,所述乳糖醇为 2~20份,所述聚葡萄糖为5~15份,所述L-阿拉伯糖为1~10份。
可选地,所述菠萝为0.5~1.0份,所述木瓜为0.2~1.0份,所述苹果为0.8~1.8份,所述香蕉为0.3~1.2份,所述猕猴桃为0.5~1.0份,所述桔子为0.4~1.2份,所述葡萄为0.8~1.5份,所述柠檬为0.1~1.0份,所述火龙果为0.3~1.2份,所述哈密瓜为0.3~1.1份,所述荔枝为0.5~1.0份。
在本发明酵素饮料制备方法中,所述混合益生菌与所述浸渍液的质量比为7%~10%。若所述混合益生菌与所述浸渍液的质量比小于7%,所述混合益生菌比较少,发酵时间相应延长,发酵效率比较低,也会对发酵后的口味产生影响。若所述混合益生菌与所述浸渍液的质量比大于10%,所述混合益生菌比较多,会导致氧气的提前耗尽,生存竞争变大,菌群的生长失衡,同样也会对发酵后的口味产生影响。
在本发明酵素饮料制备过程中采取多段式厌氧发酵,可以根据物料的发酵状态,对发酵过程进行调整,从而发酵效果更好。多次优化发酵条件发现,发酵初期不添加酵母菌,当pH值达到4.2时,再添加酵母菌,且相应地调整发酵温度,直至pH值达到3.6时终止发酵,这种发酵方式下的发酵效果比较好。
在本发明酵素饮料制备方法中,经过多次实验的验证发现,选择上述水果、混合益生菌、复合糖醇类物质、鱼皮胶原蛋白肽、维生素C,及选择上述多段式厌氧发酵流程,才得到具有营养丰富、口感好、润肠通便、解酒、降尿酸和改善肌肤功效的上述酵素饮料。本发明酵素饮料制备方法制备出上述酵素饮料,因此具有上述酵素饮料所带来的所有有益效果,在此不再一一赘述。
实施例1一种酵素饮料制备方法
按照如下步骤制备:
(1)取菠萝0.5~1.0份、木瓜0.2~1.0份、苹果0.8~1.8份、香蕉0.3~1.2 份、猕猴桃0.5~1.0份、桔子0.4~1.2份、葡萄0.8~1.5份、柠檬0.1~1.0份、火龙果0.3~1.2份、哈密瓜0.3~1.1份、荔枝0.5~1.0份,以上水果的至少五种,将一系列水果切丁置于密封发酵罐中,加入水500-800份和麦芽糖醇2~20份,混合均匀,形成浸渍液。
(2)取醋酸杆菌2~2.5份、发酵乳杆菌1.4~2.5份、植物乳杆菌2~3份、短双歧杆菌1.5~3份、嗜酸乳杆菌1.2~2份,以上菌种的至少两种组成复合益生菌,向所述浸渍液接种所述混合益生菌,所述混合益生菌与所述浸渍液的质量比为大于或等于7%,且小于或等于10%,30℃~35℃密闭厌氧恒温静置发酵2~4个月,发酵过程中不时搅拌,待pH值达到4.2时,停止发酵;随后添加酵母菌1.5~3份,在25~30℃的温度下发酵,待pH值达到3.6时,终止发酵。
(3)发酵完成后静置48h后,在3500~4500rpm下离心20~25分钟,过滤、灭菌,得到酵素原液。
(4)向10~200份的所述酵素原液中加入1~20份的复合益生菌、3~40 份的复合糖醇类物质、1~20份的鱼皮胶原蛋白肽及1~20份的维生素C,混合均匀;所述复合糖醇类物质包括2~20份麦芽糖醇、1~10份木糖醇、2~20份乳糖醇、5~15份聚葡萄糖、1~10份L-阿拉伯糖的至少三种糖/醇。
实施例2小鼠排便实验
使用SPF级健康雄性ICR小鼠,体重约18~22g,共60只分为6组(对照组、模型组、酵素组、竞品1组、竞品2组和超范围组,其中,竞品1组和竞品2组为线上购买宣称具有润肠通便效果的热销的酵素产品),在灌胃15 d后,各组小鼠禁食不禁水16h后,进行排便。6组小鼠分别按照以下组分给予灌胃,0.5h后再灌胃墨汁(1∶1混合)0.2mL(含5%活性炭粉、10%阿拉伯树胶),开始记录每只动物排首粒黑便时间、5h内排黑便粒数,称量粪便重量,结果见表1。
模型组:先给予蒸馏水1mL/kg,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
空白对照组:一直给予蒸馏水1mL/kg。
本方案酵素组(新酵组):酵素原液80份;复合益生菌12.6份,复合益生菌由酵母菌2份、醋酸杆菌2.3份、发酵乳杆菌2份、植物乳杆菌2.5份、短双歧杆菌2份、嗜酸乳杆菌1.8份组成;复合糖醇类物质39份,所述复合糖醇类物质由麦芽糖醇10份、木糖醇8份、乳糖醇8份、聚葡萄糖7份、L- 阿拉伯糖6份组成;鱼皮胶原蛋白肽12份;以及维生素C,8份。
竞品1组:先给与竞品酵素,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
竞品2组:先给与竞品酵素,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
超范围组:酵素原液300份;复合益生菌31份,所述复合益生菌由酵母菌5份、醋酸杆菌3份、发酵乳杆菌5份、植物乳杆菌5份、短双歧杆菌8 份、嗜酸乳杆菌5份组成;复合糖醇类物质120份,所述复合糖醇类物质由麦芽糖醇30份、木糖醇20份、乳糖醇30份、聚葡萄糖20份、L-阿拉伯糖 20份组成;鱼皮胶原蛋白肽30份;以及维生素C,30份。15d后给予盐酸洛哌丁胺(5mg/kg BW)。
需要说明的是,盐酸洛哌丁胺为止泻药,以抑制小鼠排便。

分析实验结果,见图1-2,与对照组相比,模型组首粒黑便时间显著上升 (P<0.001),黑便粒数和黑便重量显著降低(分别是P<0.01,P<0.05),说明使用盐酸洛哌丁胺构建小鼠便秘模型成功。与模型组相比,新酵酵素组,竞品酵素1组,竞品酵素2组小鼠的首粒黑便时间均低于模型组(分别是P<0.001,P<0.05,P<0.05)。并且新酵酵素组小鼠的首粒黑便时间显著低于竞品酵素1组和竞品酵素2组小鼠(P值均<0.05)。与模型组相比,新酵酵素组的黑便粒数高于模型组(P<0.05)。并且新酵酵素组小鼠的黑便粒数显著高于竞品酵素2组小鼠(P<0.05)。
除外,见图3,在黑便重量指标上,新酵酵素组小鼠的黑便重量显著高于竞品酵素1组和竞品酵素2组小鼠(P值均<0.05)。*表示P<0.05,#表示P<0.05, &表示P<0.05,**表示P<0.01,***表示P<0.001,&&表示P<0.01。以上实验数据表明本方案酵素产品的促排便效果显著好于其他两款竞品酵素。
实施例3小肠运动实验
使用SPF级健康雄性ICR小鼠,体重约18~22g,共60只分为6组(对照组、模型组、酵素组、竞品1组、竞品2组和超范围组,其中,竞品1组和竞品2组为线上购买宣称具有润肠通便效果的热销的酵素产品),各组小鼠禁食不禁水16h后,分别按照以下组分给予灌胃。
模型组:先给予蒸馏水1mL/kg,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
空白对照组:一直给予蒸馏水1mL/kg。
本方案酵素组(新酵组):酵素原液80份;复合益生菌12.6份,所述复合益生菌由酵母菌2份、醋酸杆菌2.3份、发酵乳杆菌2份、植物乳杆菌2.5 份、短双歧杆菌2份、嗜酸乳杆菌1.8份组成;复合糖醇类物质39份,所述复合糖醇类物质由麦芽糖醇10份、木糖醇8份、乳糖醇8份、聚葡萄糖7份、 L-阿拉伯糖6份组成;鱼皮胶原蛋白肽12份;以及维生素C,8份。15d后给予盐酸洛哌丁胺(5mg/kg BW)。
竞品1组:先给与竞品酵素,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
竞品2组:先给与竞品酵素,15d后给予盐酸洛哌丁胺(5mg/kg BW)。
超范围组:酵素原液300份;复合益生菌31份,所述复合益生菌由酵母菌5份、醋酸杆菌3份、发酵乳杆菌5份、植物乳杆菌5份、短双歧杆菌8 份、嗜酸乳杆菌5份组成;复合糖醇类物质120份,所述复合糖醇类物质由麦芽糖醇30份、木糖醇20份、乳糖醇30份、聚葡萄糖20份、L-阿拉伯糖 20份组成;鱼皮胶原蛋白肽30份;以及维生素C,30份。0.5h后,各组灌胃墨汁0.2mL。15d后给予盐酸洛哌丁胺(5mg/kg BW)。
而后,在灌胃墨汁25min后立即脱颈椎处死,打开腹腔分离肠系膜,剪取上端自幽门、下端至回盲部的肠管,置于托盘上,轻轻将小肠拉成直线,测量肠管长度为“小肠总长度”,从幽门至墨汁前沿为“墨汁推进长度”。按下列公式计算墨汁推进率:
墨汁推进率/%=墨汁推进长度/cm÷小肠总长度/cm×100

见图4,与对照组相比,模型组墨汁推进率显著降低(P<0.001),说明使用盐酸洛哌丁胺构建小鼠便秘模型成功。与模型组相比,新酵酵素组,竞品酵素1组,竞品酵素2组小鼠的墨汁推进率均高于模型组(分别是P<0.001, P<0.01,P<0.05)。表明该三组酵素产品均可促进便秘模型小鼠的小肠蠕动。并且新酵酵素组小鼠的墨汁推进率显著高于竞品酵素1组和竞品酵素2组小鼠(分别是P<0.001,P<0.05)。其中,*表示P<0.05,#表示P<0.05,&表示 P<0.05,**表示P<0.01,***表示P<0.001,&&表示P<0.01。
以上实验数据表明本方案酵素产品的促小肠蠕动、润肠通便效果显著好于其他两款竞品酵素。

Claims (8)
1.一种酵素饮料,其特征在于,按重量份计,其制备材料由如下成分组成:
酵素原液,10~200份;
复合益生菌,1~20份,所述复合益生菌由酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌组成;
复合糖醇类物质,3~40份,所述复合糖醇类物质由麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖组成;
鱼皮胶原蛋白肽,1~20份;以及
维生素C,1~20份;
其中,所述酵素原液由多种水果的浸渍液接种所述复合益生菌后,在密闭容器中发酵而得,多种所述水果由菠萝、木瓜、苹果、香蕉、猕猴桃、桔子、葡萄、柠檬、火龙果,哈密瓜和荔枝组成。
2.如权利要求1所述的酵素饮料,其特征在于,所述
酵素原液,50~150份;
复合益生菌,5~15份,所述复合益生菌由酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌组成;
复合糖醇类物质,10~20份,所述复合糖醇类物质由麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖组成;
鱼皮胶原蛋白肽,10~15份;以及
维生素C,5~15份。
3.如权利要求2所述的酵素饮料,其特征在于,所述
酵素原液,100份;
复合益生菌,10份,所述复合益生菌由酵母菌、醋酸杆菌、发酵乳杆菌、植物乳杆菌、短双歧杆菌、嗜酸乳杆菌组成;
复合糖醇类物质,15份,所述复合糖醇类物质由麦芽糖醇、木糖醇、乳糖醇、聚葡萄糖、L-阿拉伯糖组成;
鱼皮胶原蛋白肽,13份;以及
维生素C,13份。
4.如权利要求1所述的酵素饮料,其特征在于,所述复合益生菌中,所述酵母菌为1.5~3份,所述醋酸杆菌为2~2.5份,所述发酵乳杆菌为1.4~2.5份,所述植物乳杆菌为2~3份,所述短双歧杆菌为1.5~3份,所述嗜酸乳杆菌为1.2~2份。
5.如权利要求1所述的酵素饮料,其特征在于,所述复合糖醇类物质中,所述麦芽糖醇为2~20份,所述木糖醇为1~10份,所述乳糖醇为2~20份,所述聚葡萄糖为5~15份,所述L-阿拉伯糖为1~10份。
6.如权利要求1所述的酵素饮料,其特征在于,所述酵素原液中,所述菠萝为0.5~1.0份,所述木瓜为0.2~1.0份,所述苹果为0.8~1.8份,所述香蕉为0.3~1.2份,所述猕猴桃为0.5~1.0份,所述桔子为0.4~1.2份,所述葡萄为0.8~1.5份,所述柠檬为0.1~1.0份,所述火龙果为0.3~1.2份,所述哈密瓜为0.3~1.1份,所述荔枝为0.5~1.0份。
7.一种如权利要求1至6任意一项所述酵素饮料的制备方法,其特征在于,包括如下步骤:
(1)取菠萝0.5~1.0份、木瓜0.2~1.0份、苹果0.8~1.8份、香蕉0.3~1.2份、猕猴桃0.5~1.0份、桔子0.4~1.2份、葡萄0.8~1.5份、柠檬0.1~1.0份、火龙果0.3~1.2份、哈密瓜0.3~1.1份和荔枝0.5~1.0份,将上述一系列水果切丁置于密封发酵罐中,加入水500-800份和麦芽糖醇2~20份,混合均匀,形成浸渍液;
(2)取醋酸杆菌2~2.5份、发酵乳杆菌1.4~2.5份、植物乳杆菌2~3份、短双歧杆菌1.5~3份和嗜酸乳杆菌1.2~2份组成复合益生菌,向所述浸渍液接种所述混合益生菌,所述混合益生菌与所述浸渍液的质量比为大于或等于7%,且小于或等于10%,30℃~35℃密闭厌氧恒温静置发酵2~4个月,发酵过程中不时搅拌,待pH值达到4.2时,停止发酵;随后添加酵母菌1.5~3份,在25~30℃的温度下发酵,待pH值达到3.6时,终止发酵;
(3)发酵完成后静置48h后,在3500~4500rpm下离心20~25分钟,过滤、灭菌,得到酵素原液;
(4)向10~200份的所述酵素原液中加入1~20份的复合益生菌、3~40份的复合糖醇类物质、1~20份的鱼皮胶原蛋白肽及1~20份的维生素C,混合均匀;所述复合糖醇类物质包括2~20份麦芽糖醇、1~10份木糖醇、2~20份乳糖醇、5~15份聚葡萄糖、1~10份L-阿拉伯糖。
8.如权利要求1至6任意一项所述的酵素饮料在润肠通便、解酒、降尿酸和改善肌肤中的应用。
