本发明涉及一种中药材植物多糖养生酒的制备方法,其特征在于,包括如下步骤:S1:准备党参0.08~0.12份、黄芪0.08~0.12份、枸杞子0.08~0.12份、肉苁蓉0.06~0.10份、黄精0.05~0.10份、去离子水10~12份、酱香型基酒85~90份;S2:将党参、黄芪、肉苁蓉、黄精低温粉碎后和枸杞子混合,采用靶向闪提技术分别进行水提和醇提,提取结束后提取液贮存备用;S3:将水提液和醇提液辅以酱香型基酒,经过配伍、调味、老熟、精滤、灌装,得到中药材植物多糖养生酒。本发明可以实现植物多糖、皂苷、黄酮三者在药酒中的高值共存。

一种中药材植物多糖养生酒制备方法
技术领域
本发明涉及一种养生酒的制备方法,尤其涉及一种中药材植物多糖养生酒的制备方法。
背景技术
酒与药物的结合是饮酒养生的一大进步。酒之于药主要有三个方面的作用:1.可以使药物的作用得到较好的发挥,使滋补药物补而不滞;2.有助于药物有效成分的析出;3.有防腐作用,一般药酒都能保存数月甚至数年时间而不变质。现有大部分养生药酒在制备时,药材一般都是整根放,也可以切成3~5毫米的片剂或者段剂,但很少研磨成颗粒。因为颗粒容易使药液混浊,透光度不好,而且颗粒状药物溶解得快,浓度大。此外,一些药物(例如植物多糖),随着酒精浓度的增加,溶解度逐渐降低,而另外一些药物(例如皂苷、黄酮等),随着酒精浓度的增加,其溶解度却是先降低后增加,容易导致中药材中一些特定的成分不能在酒精中实现含量高值共存。
发明目的
本发明的目的在于提供一种中药材植物多糖养生酒的制备方法,可以实现植物多糖、皂苷、黄酮三者在药酒中的高值共存。
为实现上述发明目的,本发明采取的技术方案为:一种中药材植物多糖养生酒的制备方法,包括如下步骤:S1:准备党参0.08~0.12份、黄芪0.08~0.12份、枸杞子0.08~0.12份、肉苁蓉0.06~0.10份、黄精0.05~0.10份、去离子水10~12份、酱香型基酒(含调味酒)85~90份;S2:将党参、黄芪、肉苁蓉、黄精低温粉碎后,和枸杞子混合,采用靶向闪提技术分别进行水提和醇提,提取结束后提取液贮存备用;S3:将水提液和醇提液辅以酱香型基酒,经过配伍、调味、老熟、精滤、灌装,得到中药材植物多糖养生酒。
上述方案中,步骤S2中,水提工艺为:将混合后的中药材加入到10~15倍的去离子水中,再加入占药材总重量0.2~0.3%的复合酶,三者充分混匀,常温浸泡20~30min后进行闪提;常温提取三次,每次时间10min,转速6000~8000r/min;提取结束后,将提取液在5~10℃条件下冷冻离心,10~15min/次,过滤后得到上清液,调整酒度在18~20%vol,即得水提液。
上述方案中,步骤S2中,复合酶为纤维素酶和果胶酶。
上述方案中,步骤S2中,醇提工艺为:将水提过程中的滤渣用占药材总重量15~20倍、酒精度为70~72%vol的溶媒充分混匀后,常温提取三次,每次的时间和转速与水提工艺相同,即得醇提液。
上述方案中,步骤S3中,将水提液3.5~4.0%,醇提液3.5~4.0%,酱香型基酒85~90%,去离子水5~8%进行有机融合,得到植物多糖、皂苷、黄酮在药酒中高值共存的养生酒。
上述方案中,步骤S3中,粗多糖、皂苷和总黄酮含量分别为800~1000mg/L、1000~1200mg/L、500~600mg/L。
本发明还提供了一种中药材植物多糖养生酒,包括下述重量份的原料:党参0.08~0.12份、黄芪0.08~0.12份、枸杞子0.08~0.12份、肉苁蓉0.06~0.10份、黄精0.05~0.10份、去离子水10~12份、酱香型基酒(含调味酒)85~90份。
本发明的有益效果:(1)根据植物多糖、皂苷、黄酮三者在酒溶液中的融合特性,在确定药材配伍和45~53%vol酒度条件下,随着酒精浓度的增加,植物多糖溶解度逐渐降低(降幅5~15%),所以本发明采用水提醇沉的方法提取多糖;而皂苷、黄酮含量先降低后升高(幅度变化不大),所以本发明通过工艺技术的选择和优化,以甘肃道地中药材党参、黄芪、枸杞为原料,配伍肉苁蓉、黄精等“药食同源”中药材,以赤水河畔优等酱香型白酒为基酒,针对原料的药理特性,进行分析研究和科学配伍,促进药材提取液和多种基酒的有机融合,使植物粗多糖(800~1000mg/L)、皂苷(1000~1200mg/L)、总黄酮(500~600mg/L)等生物活性物质能够在45~53%vol成品酒中实现高值共存,体现出成品酒的特定功效及其原料药材的药性。(2)产品色泽呈淡黄色,具有酱香型白酒特有风格,而闻香和入口略有药材的滋味,不会给消费者造成心理负担,酒液口感醇和柔顺,功能凸显,酒体风格和品质更加稳定,给消费者更好的健康享受。(3)采用传统和现代相结合的低温粉碎、靶向闪提(复合酶解+水提醇沉、醇提)等工艺技术,依靠高速机械剪切力和超动分子渗滤技术、冷冻离心过滤技术,使大部分植物多糖快速最大限度融入水提液中;对滤渣进行醇提时,以酒度为切入点,优选参数,促使滤渣中的皂苷、黄酮等成分释放,最大限度融入醇提液中。
具体实施方式
本实施例中所选主要药材的特定功效如下:

本实施例的工艺流程:原料验收→低温粉碎→配料混合→加水浸泡→闪提→冷冻离心取汁→水提液暂存→滤渣加醇→闪提→醇提液暂存→调配→贮存→澄清处理→灌装→灯检→外包装→检验→成品入库。
具体实施方法为:包括下述重量份的原料:党参0.08~0.12份、黄芪0.08~0.12份、枸杞子0.08~0.12份、肉苁蓉0.06~0.10份、黄精0.05~0.10份、去离子水10~12份、酱香型基酒(含调味酒)85~90份,先按照配比,将党参、黄芪、肉苁蓉、黄精(以上均低温粉碎)和枸杞子等多种中药材(药材总量控制在0.5~0.6份)充分混合后,采用靶向闪提技术(复合酶解+水提醇沉、醇提)分别进行水提和醇提,设备为闪式提取器,提取结束后提取液贮存备用。将水提液和醇提液辅以酱香型基酒(含调味酒),经过科学配伍、调味、老熟、精滤、灌装,得到中药材植物多糖养生酒。
其中:(1)水提工艺及其参数:将混合后的多种中药材加入到10~15倍的去离子水中,再加入占药材总重量0.2~0.3%的复合酶(纤维素酶和果胶酶),三者充分混匀,常温浸泡20~30min后进行闪提。常温提取三次,每次时间10min,转速6000~8000r/min。提取结束后,将提取液在5~10℃条件下冷冻离心,10~15min/次,过滤后得到上清液,调整酒度在18~20%vol,即得水提液。(2)醇提工艺及其参数:将下层滤渣(含水提醇沉时的沉淀)用占药材总重量15~20倍、酒精度为70~72%vol的溶媒充分混匀后,常温提取三次,每次的时间和转速与水提工艺相同,即得醇提液。(3)调配及后续制备工艺及其参数:根据确定的药材配伍和45~53%vol酒度要求,将水提液和醇提液与多种酱香型基酒(含调味酒)有机融合,通过择优配比,水提液3.5~4.0%,醇提液3.5~4.0%,酱香型基酒(含调味酒)85~90%,去离子水5~8%,此时,产品中的粗多糖、皂苷和总黄酮含量分别为800~1000mg/L、1000~1200mg/L、500~600mg/L。
通过响应面优化调配及后续制备工艺,本实施例在确定药材配伍和45~53%vol酒度条件下,随着酒精浓度的升高,产品中的粗多糖含量逐渐降低(降幅5~15%);黄酮和皂苷含量先降低后升高(幅度变化不大),粗多糖、皂苷和黄酮含量在产品中基本实现高值共存(实例数据见下表)。

Claims (7)

1.一种中药材植物多糖养生酒的制备方法,其特征在于,包括如下步骤:
S1:准备党参0.08~0.12份、黄芪0.08~0.12份、枸杞子0.08~0.12份、肉苁蓉0.06~0.10份、黄精0.05~0.10份、去离子水10~12份、酱香型基酒85~90份;
S2:将党参、黄芪、肉苁蓉、黄精低温粉碎后,和枸杞子混合,采用靶向闪提技术分别进行水提和醇提,提取结束后提取液贮存备用;
S3:将水提液和醇提液辅以酱香型基酒,经过配伍、调味、老熟、精滤、灌装,得到中药材植物多糖养生酒。
2.根据权利要求1所述的一种中药材植物多糖养生酒的制备方法,其特征在于,步骤S2中,水提工艺为:将混合后的中药材加入到10~15倍的去离子水中,再加入占药材总重量0.2~0.3%的复合酶,三者充分混匀,常温浸泡20~30min后进行闪提;常温提取三次,每次时间10min,转速6000~8000r/min;提取结束后,将提取液在5~10℃条件下冷冻离心,10~15min/次,过滤后得到上清液,调整酒度在18~20%vol,即得水提液。
3.根据权利要求2所述的一种中药材植物多糖养生酒的制备方法,其特征在于,步骤S2中,复合酶为纤维素酶和果胶酶。
4.根据权利要求2所述的一种中药材植物多糖养生酒的制备方法,其特征在于,步骤S2中,醇提工艺为:将水提过程中的滤渣用占药材总重量15~20倍、酒精度为70~72%vol的溶媒充分混匀后,常温提取三次,每次的时间和转速与水提工艺相同,即得醇提液。
5.根据权利要求4所述的一种中药材植物多糖养生酒的制备方法,其特征在于,步骤S3中,将水提液3.5~4.0%,醇提液3.5~4.0%,酱香型基酒85~90%,去离子水5~8%进行有机融合,得到植物多糖、皂苷、黄酮在药酒中高值共存的养生酒。
6.根据权利要求5所述的一种中药材植物多糖养生酒的制备方法,其特征在于,步骤S3中,粗多糖、皂苷和总黄酮含量分别为800~1000mg/L、1000~1200mg/L、500~600mg/L。
